Heart Healthy Meals This Valentines Day with Waitrose

When Waitrose asked me if I wanted to try out some of their recipes from their Healthy Heart Project I of course said yes!

I really love that at a time of year when we are bombarded with adverts for chocolate and wine Waitrose have shown that you can have delicious, romantic (if you get a babysitter) meals whilst still eating healthy food. Although of course they still sell chocolate and wine – thankfully. Check out the link above to find our more about the Foods of love including things like oats, nuts, pulses, salmon and more.

I chose to make Butternut Squash and Chickpea Curry and a Spiced Fruity Crumble I followed the recipes exactly other than to make two substitutions. I swapped the chopped spinach for baby leaf spinach and the forest fruits for mixed summer fruits.

We were all thoroughly impressed with the quality of the food. We didn’t miss having meat in the curry and I thought I’d miss having butter in my crumble but it was delicious and the addition of muesli to the topping was just fabulous.

Looking to make another crumble for our Valentines meal on Friday and possibly this recipe as well as enjoy a glass of something pink and sparkly which I nabbed for a bargain £6.99.

Valentine Love Hearts

A fab idea from Tate & Lyle Sugar for last minute Valentines gifts.. Definitely going to give them a whirl if I get some free time.

Love Hearts

Makes: 2 pairs
Prep time: 30 minutes
Cooking time: 1 hour

Meringue:
60g Golden Caster Sugar
1 large egg white,
1 tsp green  food colour gel or paste

for the filling
65ml double cream
110g  cherry compôte
Icing Sugar, for dusting

You will also need 2 baking trays lined with parchment paper, heart-shaped cutter and a piping bag fitted with a star nozzle.

Preheat the oven to 200°C

Using the cutter, draw 4 heart shapes with a pencil on the 1 of the sheets of parchment paper, spaced apart as the meringues will spread. Turn the paper over so you don’t get pencil on  the meringues.
Tip the sugar onto the remaining baking tray and spread an even layer. Warm through on the middle shelf of the oven for about 3-4 minutes or until the sugar feel hot to touch and has lightly coloured, stirring once. Don’t let it caramelize. Pour into a small bowl. Reduce the oven heat down to its lowest, 110°C
As soon as the sugar is ready, add the white to the bowl and whisk at high speed until it is light and foamy, for about 1 minute. Slowly add the hot sugar, a dessertspoon at a time, and continue whisking until the mixture has cooled and is thick and glossy. Scrape down the sides halfway through. This will take 5 minutes.
Using a fine skewer or toothpick, add a little of the colouring, briefly whisk again and check that it’s the colour you’d like adding more slowly. Use a little of the meringue to stick down the paper on the baking tray, spoon the mixture into the piping bag and pipe the heart shape. Bake for 60 minutes. The meringues are ready when they are crisp on the outside and the bases are dry and not at all sticky. Turn off the oven and leave to cool in the oven for a few hours.
To assemble, lightly whisk the cream, divide between half of the meringue hearts, spoon on the cherry compôte, then top with the remaining hearts. Arrange on plates, lightly dust with Icing Sugar, decorate and serve.

The meringues can be made up to 2 weeks ahead and stored in an air-tight container.

How To Achieve Calm?

The last few days I have felt far from calm. Chloe is having what seems like another growth spurt and she seems to be either constantly attached to my chest or whining and rooting around to get on my chest. I love breastfeeding I really do but it’s not easy on days like this. My arms and back hurt and don’t get me started on my nipples. Owww. I’ve started re reading a book that my OH gave me years ago called ‘The Little Book of Calm’ written by Paul Wilson. I’ve found that some of the quotes and tips in the book really help me to take a step back and chill out.

One of my biggest problems is expecting too much of myself. This tip helps..I just need to reread it more!

Lower the crossbars: One of the greatest strains in life is constantly having to live up to the standards we set for ourselves. Do yourself a favour and from time to time relax those standards a little

So maybe I won’t always have an immaculate house or home cooked meals every day, maybe I won’t have sheeny, swingy hair all the time but as long as my family are happy and helps they that’s all that matters yes?

This next one is also important to me right now:

Snatch a couple of minutes: If you feel you need it, take brief cat naps throughout the day. You’ll be surprised at how much peace can come from a few minutes.

I rarely nap although I know I need to. I’m always tired which is how life is with a young baby but I do get opportunities to nap I just don’t take them. I am going to try to take advantage of it more even if just for 15 mins.

I love this next one:

Stockpile beautiful moments – write them down, keep a photo, keep a record in your computer. Recall these moments often, reflecting on them, taking pleasure in them, integrating them into your day to day routine and outlook

I’ve already started on this one, last week I ordered a few hundred photos and they arrived yesterday. I plan to put pics up around the house, keep some in my purse and just remember the happy moments of which there are lots.

Rest in a tub – A leisurely, warm bath soothes like no other method. Lower the lights, add a few drops of your favourite oil and you’ll be transported

I do try to have a relaxing bath each day, the therapist I saw after having Chloe advised it and I know it helps. What I am guilty of is using that short period of relaxation to reply to texts and emails. I need to learn to switch off so from now on no iPhone in the bath and lights dimmed so I can wind down. May have to treat myself to some new oils too.

There are lots more tips in the book and if you need to find some calm in your life I would recommend buying it.

The Talkative Twos

It’s been a while since I wrote about Izzy. Of course she’s been included in other blog posts and I’ve written some recipes and talked about us cooking together but I haven’t written just about her. Life has been rather chaotic so I guess that’s to blame but I don’t want to look back on this time in her life and think why didn’t I write about that? Because its a funny time. She’s harder at this age ( she knows her own mind) but she’s also easier at this age ( she sleeps ) and she is so so funny.

Every day I laugh at something she says or does. Every single day. Even when I was incredibly down just before giving birth and weepy and depressed after giving birth ( I still get these days) she managed somehow to make me laugh which must make her a pretty amazing girl yes?

I wonder how her little mind works when she suddenly pipes up 3 months post partum “Mammy where’s your belly gone?” Or how she seems to know everything. Now this isn’t a mummy brag but seriously the child knows everything. Nothing gets past her. This isn’t always a good thing.

Her favourite phrase is still ” What are you doing?” I hear it on average 200 times a day. Sometimes it gets a bit much and I ask her the question over and over which annoys her and amuses me. Yes I’m a mature parent.

She loves her grandparents and her extended family. She asks for them all the time and will often demand we make cakes for Nanna.

Her favourite foods are tomatoes, olives and cheese. She mostly has a hearty appetite and will eat whatever we do but just this last week has developed an adorable (not) habit of chewing her food into mulch and then spitting it out – aaarghhh please tell me it’s a phase.

Sleep is still good for us. I realise just how lucky we are that for the most part Izzy sleeps from 7pm to 7am and naps for 1.5hrs at lunchtime. She loves going to bed especially at nap time and will tell you when she’s ready..on a recent shop trip she removed her shoes and climbed onto a display bed:

She is pretty well behaved, ask anyone and they will tell you she’s such a good girl but she can also be naughty. She can be very naughty and I have days when I feel like pulling my hair out. She is normally only misbehaved for me and her Dad although we discipline her well and I think it’s because she feels secure enough to push our buttons. And push them she does.

Nine times out of ten she is helpful and generous, if I ask her to pass me the feeding cushion or a muslin when Chloe is screaming for a feed she will run and fetch them for me saying “Izzys helping” ( we have a lot of talking in the third person) then on just the one occasion when I will really need it she will flat out say no. Normally smiling wickedly whilst doing so. Why does that happen? I have no idea.

I still don’t think of this time as the terrible twos though. She is such a bundle of happiness and light on the whole that I can put up with a little naughty behaviour and at least we don’t have tantrums – the tantrum phrase was very short lived with us although I know it could still return.

She is very blonde and blue eyed and she is finally getting some hair – it looks pretty curly ..awwww. She is super tall like her Dad and most of her baby fat has gone which is not surprising as the girl does not stop moving. My Dad calls her Busy Izzy and its not hard to see why.

She loves to go the park and the river with her Dad when they can run about and get messy. She loves the soft play and so does her Dad – luckily.

At home she likes to draw, paint and play. TV no longer holds her attention unless she’s feeling unwell and she rarely asks to watch anything – whilst I should be pleased about this some days a 20 minute break would be lovely. If anything will hold her attention it’s still good old Mr T (Tumble that is) Her favourite at home activity is by far cooking click here to see her in action – hopefully this will continue as its something I love too.

She can count to 11 and has done for a while. She knows the words for everything and doesn’t stop saying them but flat out refuses to learn her colours. She knew them about 6 months ago but now she insists that everything is green. We are working on that one. She understands when I tell her she can have something tomorrow or after her nap. Quite often if she asks for something sweet when we are out I will say yes we can get it and she will say “Eat it after nap” she knows that she doesn’t have treats just prior to bed and will instead ask for the cake or biscuit in the morning – she also understands that chocolate is a big treat and gets very excited. We have recently started to offer yoghurt raisins as a healthy snack and she thinks they are sweets so her face lights up when she sees me getting the box.

She is an extremely loving child. We all get lots of hugs and kisses off Izzy especially Chloe whom she clearly adores. She also tells us she loves us THIS MUCH and stretches her arms out wide – it makes me feel so good but then she does the same thing for cake 😉

There are so many things she does or says that I could tell you but I fear I may be rambling already.

What matters most is that even at this time – by far my most challenging year she makes us all smile and I get a glow when she squeezes me so tightly or gazes at her sister with love or still manages to look small curled up on her Dads lap. She may not be the smallest baby anymore but my baby she still is.

Siblings – February

Another month has passed and my newborn isn’t so new anymore,my toddler seems to grow an inch a day and I wonder how time goes by so quickly. The last three weeks have been pretty awful, I was admitted to hospital (twice) had a lumbar puncture and CT scan which were not particularly pleasant and I’m only just starting to feel better. What has got me through each day is my wonderful family and especially my OH and these two happy girls. It feels odd to say it as she’s only 12wks old but it feels like Chloe has always been around and Izzy is constantly looking for her, kissing her or singing at her. They are lovely to watch.

Cooking in the kitchen..having fun – Blueberry Muffins

I’m a mean mum. I don’t let Izzy eat anything sweet after 4.30pm and I try to limit the amount of chocolate/cakes she eats generally.

So maybe I’m a little strict about food. But she’s never hungry, she has lots of snacks – healthy ones mostly and the occasional treat.

What I do like to do is bake with her at home. She has all the fun of baking and I know exactly what has gone into the food she is eating. Cakes are our biggest treats. I especially like to teach her to make fruit cakes, banana bread, rock cakes with raisins and new to our recipe repertoire BLUEBERRY MUFFINS. Yum.

Izzy loves blueberries. Loves them. She also likes cake. A lot. A combo of the two was always going to be a winner.

To make these muffin/cakes ( it’s a bit more cakey than muffiny ( is muffiny a word) but totally delicious all the same) you will need:

250g Plain flour
225g Caster sugar
120g Butter
2 Medium Eggs
150g Blueberries
130ml milk
10g Baking powder
1tsp Vanilla extract
Pinch of salt

Preheat your oven to gas mark 4(180).

Mix together your flour, baking powder and salt in a bowl. In another bowl cream your butter and sugar together before adding your eggs and beating in well. Add your dry ingredients to the wet, adding your milk and vanilla at that time also and beat with a wooden spoon until smooth. Stir in your blueberries. Split between your cake cases/silicon muffin trays. The amount it makes depends on the size of muffin/cake cases you use… Also how generous your toddler is being with the dolloping. As a guide I made 12 normal sized cakes (cupcake size) and 6 mini muffins.

Bake for 20-25 minutes until golden and spring back when pressed lightly with a finger. Leave to cool on a wire rack.

You could lightly dust with some icing sugar to pretty them up afterwards.

They really are delicious and so simple to make. A perfect breakfast treat for all the family.

Quick Family Meals – Corned Beef and Mixed Veg Fritters

A little while ago I was set a challenge by Princes. They offered to send me some of their new Corned Beef flavours to create a family meal which would take less than 20 minutes to make and cost less than £5. I love a good cooking challenge so I put my thinking cap on and got to work.

The recipe I created is fairly simple and easy to make but pretty tasty too.

Chilli Corned Beef and Mixed Veg Fritters

You will need:

1 tin of Corned Beef with Chilli – broken into small pieces
150g of SR flour
175ml of semi skimmed milk
1 medium egg
1 cup or 200g of frozen mixed vegetable ( cooked in microwave for 3 minutes)
Pinch of sea sat
Pinch of crushed black peppercorns
Vegetable oil

Mix together your corned beef and veg and set aside. Mix your flour, egg, milk and seasoning together into a thick batter and leave to stand for 10 minutes ( more if you have time)

then stir in your corned beef and vegetables.

Place a large frying pan over a high heat and add your vegetable oil, heat until bubbling and then add dollops of your batter mix. Cook for a few minutes on each side until golden.

Serve with a large green salad and a sweet chilli sauce perhaps.

This meal costs less than £4.50 to make including salad and sauce and makes more than enough for two hungry adults and one energetic toddler. The hint of chilli in the corned beef gives the fritters a bit of a kick but is subtle enough for children to eat and enjoy.

Making life easier – Preparation

I knew that being a mum of two would be hard but well it’s really hard. I often feel like I’m not coping as well as I should be although deep down I know that I’m probably doing just fine. I love having my two girls around me but I do feel like I don’t get anything else done. Both girls are always clean and well fed and some days I feel that’s about all I achieve.

I’m probably putting too much pressure on myself but I get frustrated when I don’t make decent home cooked meals and have to rely on ready prepared items from my fridge or freezer. Cooking decent meals is my thing and very stupidly I feel a bit lost when I don’t do it.

I have decided to do something about it.

Every week I’m going to spend 2-3 hours on meal preparation for the week ahead. I will chop vegetables, marinade meat, measure out items and generally get organised so that I can toss some ingredients in the slow cooker or oven and feel better about the food we eat. I figure that if I feed Chloe and put her down for her afternoon nap ( generally her longest sleep of the day) Izzy can play with her Dad or they can go to the park and I can get my organised head on.

My hot cooked meal plans include:

Casseroles
Curries
Stew
Bolognese
Soup
Pie fillings

So I will chop and prepare my vegetables and meat ready for quick assembly and bag/box them up with the stock/seasonings they need.

I am also aiming to batch cook one dish a week so perhaps on week one it will be bolognese sauce – I will cook 5 meal sized portions of sauce and freeze all but one. I will use that one the same day and have 4 easy to defrost and cook meal ideas for the following weeks if I run short of time or can’t do meal preparation that week for one reason or another. These could be made into pasta bakes, lasagne or jacket potato toppings.

I’m going to wash and prepare all my salad items so they are easy to assemble for lunches and if I get enough time I’m also hoping to make large amounts of waffles, muffins etc to freeze for delicious easy breakfasts. Izzy loves to help me in the kitchen so I will get her involved with the baking side.

I’m still hoping at some point to get back into cooking meals on a whim and spending a few hours in the kitchen slaving over a hot stove making indulgent dishes but I do know its not always possible. For example last night when my other half was in work I put Izzy to bed but Chloe decided to attach herself to my boob from 6.30 until 11pm so nothing else got done. I have to accept that this is the way it may be for a while and just find ways to work around it rather than worry myself over trivial matters.

I will be sharing my preparation tips and meal ideas with you over the next few weeks. Any ideas you have are gratefully received.

Love Your Eggs

I didn’t used to like eggs much, I only really ever ate them in cakes and it was only when I was pregnant that I missed having them.. I know you can still eat them but having to cook them into submission didn’t really appeal.
In the last few months I have developed a real addiction to poached eggs and recently I have started trying eggs in new recipes..not just cakes!

One of my favourites is Frittata I was going to share this recipe soon as part of one of my eating on a budget blog posts but here it is sooner than planned.
The best thing about this dish is you can throw anything in, leftover boiled potatoes, peppers, meats,spinach, onions.. I could go on. Let me know if you have any special combos that you use.

This is what I used in my last frittata recipe so adapt however you like:

You will need:

1 large cazuela or pan you can use in hob or in oven
Olive oil
Chopped boiled potatoes
Chopped ham
Chopped peppers
Chopped onions
Chopped spinach
6-8 eggs beaten (dependant on size of pan)
3 or 4 tablespoons of cheese. I use pilgrims choice. Yum.

Preheat oven to 190C/fan 170C/gas 5.
Warm a little olive oil in a pan and add all ingredients apart from the eggs and cheese, sauté for 5 minutes then add your beaten eggs and cook until the mixture has set on bottom and is starting to set on top,sprinkle with your cheese and some cracked black pepper & herbs of choice and put in oven for 10-15 minutes until completely set.

When this has cooled slightly you can cut like you would a pizza or quiche and serve with a nice big salad for a healthy, budget friendly lunch. This is also great chilled and taken on picnics.

Another eggcelent (sorry I had to put it in somewhere) recipe I have recently made is spaghetti carbonara.

You will need:

1 large saucepan and 1 frying pan or cazuela
Olive oil
250g bacon, diced or roughly chopped ( I used lardons)
300mL single cream
3 tablespoons Parmesan cheese ( I have substituted other cheeses and its just as good)
3 egg yolks
Salt and pepper, to taste
350g spaghetti or tagliatelle ( I used Lidl egg spaghetti last time and it was tremendous)
Seasoning

Start to cook your pasta by the packet instructions whilst frying your bacon in a little olive oil until golden, add your cream and cheese and remove from heat to stir through. Return to heat for 2 mins before adding your egg yolks and again removing from heat to stir through.
Remove from heat, drain pasta and combine. Serve immediately with fresh grated Parmesan and black pepper.

Its so good.. This serves 2 with leftovers.

After the carbonara recipe I had 3 egg whites leftover which I didn’t want to waste so I made a quick Baileys chocolate mousse which I’d never made before but it worked really well. I adapted this from a weight watchers recipe and simple to make but very tasty.

You will need:

1 microwaveable bowl and 1 mixing bowl
Electric whisk
100g of good quality dark chocolate (70% cocoa)
3 egg whites
2 tsp of Baileys

Break your chocolate into pieces and melt in the microwave I do in 30 second bursts to make sure it doesn’t burn. Leave your chocolate to cool slightly and whisk your eggs until stiff ( the peaks should stay up when you pull the whisk out). Put a tablespoon of the egg whites into the chocolate to loosen and mix well. Gradually mix the rest of the whites in, not too fast as you lose too much air. Once it’s all mixed in add your baileys, mix once more and spoon into 4 ramekins or glasses. Refrigerate until set, mine took an hour or so to set but I left them there until the following day.

These taste so scrumptiously naughty it’s hard to believe its a low fat recipe. One is more than enough to satisfy a sweet tooth and you don’t feel overly full afterwards.
