Chocolate, Chai & Banana Milkshake

November 10, 2015 · by munchiesandmunchkins · 4 Comments

Whenever we have milk that needs to be used it always tends to end up in some kind of milkshake or hot chocolate experiment. You may have noticed recently that I am a little bit in love with Chai so I decided to try making a milkshake including three of my favourite ingredients. Chocolate. Chai. Banana.

This is just chocolatey enough with a hint of banana and a layer of warming spice. It makes enough for one larger glass and a smaller serving..perhaps for a little one?

You will need:

Approx 400ml of milk
2 tbsp Chai Latte powder ( I used Baru Spicy Chai Latte )
2 tbsp Cocoa Powder
1 large ripe Banana ( chopped)

Chocolate chai milkshake

Pop all ingredients into a blender and blitz until smooth. You can sweeten if you like but I find most chai powders are fairly sweet anyway.

Take this up a notch with some vanilla whipped cream on top and a dusting of cinnamon..or make it even more indulgent with a scoop of chocolate icecream thrown in to thicken it up.

Enjoy it straightaway with a few biscuits…of course.

*In order to test this recipe thoroughly I tried warming it up and drank it as a hot chocolate which was surprisingly tasty but I definitely prefer it as a shake.

Strawberry & Basil Soup – Jamie Oliver Superfood

November 8, 2015 · by munchiesandmunchkins · 2 Comments

There has been a bit of a craze for smoothie bowls and fruit soups lately. The new Superfood book from Jamie Oliver includes a few options for variation on these as well as added extras such as granola dust.

I tried out the Strawberry version at home yesterday and it was delicious.

The Superfood book is a completely different book to any of the other Jamie Oliver books that I have and I’m really enjoying making my way through it.

Here is the recipe but I do highly recommend that you buy the book and try some of the others out too.

Strawberry Soup:

100g of hulled Strawberries
1 tsp of Balsamic vinegar
8 Basil leaves
2 tsp of Chia Seeds
1 mug of boiling water
* drizzle of runny honey (optional)

Strawberry basil and balsamic smoothie bowl soup

Place all your ingredients into your blender and blitz until smooth. Pour into a bowl and either eat while warm ( which is surprisingly good ) or chill to eat later. Can also be poured into a glass or travel cup for an on the go smoothie.

There are lots of way you can add your own twist to this, from topping with yoghurts and fruit to adding a drizzle of fruit compote although I quite like it plain with just some basil on top and a few tiny droplets of balsamic.

Strawberry and basil soup

Next up I’m going to try the mint and kiwi – I’ll report back!

Food Blogger Of The Fortnight – The Foodie Couple Blog

November 7, 2015 · by munchiesandmunchkins · 4 Comments

This is the fourth in my series of Food Blogger Of The Fortnight interviews.

Today we meet Roz, one half of The Foodie Couple Blog.

Roz - foodie couple blog

Blog Name: The Foodie Couple Blog

The foodie couple blog logo

I first met Roz last year at a BBC Good Food Show Blogging event as we are both official bloggers for the show. I’m hoping to catch up with her again at the winter show. I love to read both her recipes and reviews. She always make the kind of food I want to eat!

Over to Roz…

The Foodie Couple Blog is a Food Travel & Lifestyle blog that began as a diary of the restaurant adventures of my husband and I, as, whilst on our honeymoon we vowed to eat our way around the Michelin Star restaurants of the world (and maybe some slightly less expensive places too!) We wanted a way to document our experiences and to remember where we had eaten and the fab food we had tried.

It has now developed into a foodie haven, and encompasses everything from our own cooking exploits & testing out chef’s recipes to covering foodie festivals, events & market visits to restaurant & product reviews with a little bit of travel and luxury lifestyle thrown in for good measure.

My most popular recipe is: Lime & Coconut Traybake

Leftover Bolognese Sauce – 5 Ways To Use

October 18, 2015 · by munchiesandmunchkins · 14 Comments

I don’t know about you but I have a bit of a problem with portion control ending up with leftovers on most days, not just leftover bolognese sauce but everything I cook. I get it from my mum who always made more than she needed of whatever she cooked – in fact she still does but I’m not complaining as it often results in roast dinners being sent over for the girls.

One thing I always have WAY too much of is leftover bolognese sauce, mainly because I’m so used to making it that I rarely measure out ingredients and I often toss in any spare veggies to bulk it out. We all know the typical way to use bolognese sauce is on a bed of spaghetti or pasta.

leftover bolognese sauce

I do find that batch cooking dishes such as this works out so much cheaper. You use less energy which leads to lower gas/electric bills and also I tend to use every scrap of veg/chickpeas etc that I have lingering around so I include less meat which again makes it cheaper. This leftover sauce never gets wasted, at least not any more. I don’t often feel like eating spaghetti bolognese twice in the same week but I find that as well as freezing a portion or two that I often feel like creating a different dish using some of the sauce. Here are some of our favourite ways of using it up:

Leftover Bolognese Sauce Ideas:

Loaded Nachos

This is a really simple dish. You simply put a layer of nachos at the bottom of a baking dish, pour over some leftover bolognese sauce, top with diced chilli or jalapeños and any leftover bits of cheese lingering in the fridge. The dish below has three different types of cheese including mozzarella which gives a gooey element! It tastes so good and it’s a great movie night supper with some sour cream to dip into.

Nachos topped with bolognese

Bolognese & Sweet Potato Pie

This is a twist on cottage pie. Place a layer of leftover bolognese sauce in a pie dish and top with sweet potato or potato mash and bake until piping hot throughout and browned and crispy on top. It’s perfect comfort food for cool autumn evenings and the girls love it.

Lasagne

This is an obvious one but a really fabulous dish – one of my favourite meals to eat. Bolognese tastes better the next day as the flavours mingle so this is a good one to make in the 1-2 days following you making the sauce. You could cheat by using fresh lasagne sheets and jars of bechamel sauce but it really is very easy to make yourself. Add spinach leaves in each layer for an easy way of getting more greens into your children.

Super Spuds

This is an idea I stole from an Instagram friend Alfresco Aussie and doesn’t it look delicious? Baked potatoes topped with leftover bolognese sauce, slaw, cheese and sour cream and well it can be adapted for more or less anything you fancy!

leftover bolognese sauce

Chilli Con Carne

Turn your bolognese into  chilli by reheating and adding a tin of kidney beans and some chilli powder. Serve with rice and you have a totally different meal.

Baked Brown Sugar Squash

October 16, 2015 · by munchiesandmunchkins · 10 Comments

I’ve been rediscovering the delights of various winter squash this month. It’s the perfect autumn vegetable and there is something so warm and comforting about it. This Baked Brown Sugar Squash is something special.

You may recall in my last post I shared a recipe for Squash, Sweet Potato & Coconut soup and I promised to let you know what I did with the other half of the squash and here it is.

This recipe is so incredibly easy yet delicious and indulgent!
Perfect late night supper for one..

Baked Brown Sugar Squash

You will need:

1/2 a small Squash ( I used red onion )
25g of Butter cubed
1 heaped tbsp of brown sugar
1 pinch of cracked black pepper

Preheat your oven to 200C. Scoop the seeds out and score the flesh in a deep cross. Place your cubes of butter inside along with your brown sugar and sprinkle pepper on top.

Baked squash with butter and brown sugar

Bake for 30 minutes until browned and soft inside. As soon as you remove from the oven use a large spoon to loosen the flesh from the skin and mash the flesh and your melted butter/sugar together and eat straight away. Not even any need for a bowl!

This is sweet and buttery and oh so autumnal.

Squash, Sweet Potato & Coconut Autumn Soup

October 14, 2015 · by munchiesandmunchkins · 6 Comments

As much as I like Summer and the warm, balmy evenings… HA I live in Wales who am I kidding? I really embrace Autumn. I’m all for snuggly jumpers, fleecy throws, steamed puddings and SOUP.

I picked up a red onion squash at my local market and I was intrigued as I had never seen one before. I wasn’t sure what to make with it so I ended up splitting it into two and using one half to make this incredibly tasty autumnal soup.

Red onion squash

I used my Kenwood kCook to create this dish from start to finish to dice, soften and simmer my soup. I’ve had this Multicooker for a few months now ands it’s a really useful piece of kitchen gadgetry! It saves time from chopping vegetables and from changing from pan to pan etc etc. Perfect for anyone who loves homemade food but struggles with finding the time.

KCook soup

You will need:

1/2 a medium squash
2 sweet potatoes
1 shallot
400ml of vegetable stock
300ml of coconut milk
1/2 tsp of oil
1 small red chilli finely diced
Pinch of sea salt ( I used smoked salt from Flavour Magic )
Pinch of black pepper

Peel your vegetables and cut into quarters before placing in your kCook machine with your oil ( if you don’t have one you can dice your veg yourself) and press stir for 1 minute until finely diced. Now cook on the soup/sauce option ( or in a pan ) for 10 minutes to soften.

KCook softening vegetables

Add your vegetable stock, coconut milk and seasoning and cook for a further 20 – 30 minutes. At the end of cooking stir/puree for 2 minutes until smooth and serve immediately.

Doesn’t just looking at it make you think of conker fights and walking through crunchy leaves? Autumn in a bowl.

Keep your eyes peeled to find out what I did with the rest of the squash!

* I received the kCook for the purpose of a review and recipe development.
