Strawberry & Basil Soup – Jamie Oliver Superfood

There has been a bit of a craze for smoothie bowls and fruit soups lately. The new Superfood book from Jamie Oliver includes a few options for variation on these as well as added extras such as granola dust.

I tried out the Strawberry version at home yesterday and it was delicious.

The Superfood book is a completely different book to any of the other Jamie Oliver books that I have and I’m really enjoying making my way through it.

Here is the recipe but I do highly recommend that you buy the book and try some of the others out too.

Strawberry Soup:

100g of hulled Strawberries
1 tsp of Balsamic vinegar
8 Basil leaves
2 tsp of Chia Seeds
1 mug of boiling water
* drizzle of runny honey (optional)

Strawberry basil and balsamic smoothie bowl soup

Place all your ingredients into your blender and blitz until smooth. Pour into a bowl and either eat while warm ( which is surprisingly good ) or chill to eat later. Can also be poured into a glass or travel cup for an on the go smoothie.

There are lots of way you can add your own twist to this, from topping with yoghurts and fruit to adding a drizzle of fruit compote although I quite like it plain with just some basil on top and a few tiny droplets of balsamic.

    Believe it or not I think this sounds more appetising warm! I just can’t get my head around cold soups. I feel like I’m being conned out of a meal if it is cold haha. I’ve heard a lot of good things about Jamie’s Superfood Book. I wonder if Santa will bring me a copy…I think it’s about time I had a read for myself!

    why cant this be made with cold water if you prefer it cold?
