Meal planning week 2

A few blogs that I follow in America post a weekly meal plan, I always find it interesting to see what others are eating and I pick up a lot of good ideas as well as the idea for having a meal planning blackboard. I’ve decided to try posting mine weekly and hope some of you will join in perhaps commenting or even writing your own post. If you can link to any favourite recipes even better!

So here is this weeks plan:

Meal planning week #1

Last month I bought a week planner blackboards and I have started making good use out of it.

This is the second week I have meal planned and it makes life a little easier and definitely means less waste! I am not regimented about it and if I feel like a change then of course I will change it but I like the structure and knowing what I’m cooking later that day.

In case you can’t read my chalk scrawl this is what this week looked like:

Sunday : Spaghetti and meatballs
Monday : Beef stew (slowcooker style)
Tuesday : Griddled spiced chicken on a bed of cabbage and mashed sweet potato/potato with a mushroom cream sauce
Wednesday: Gnocchi and meatball tomato bake
Thursday: Beef stroganoff Pheasant au vin with cabbage,peas and boiled potatoes
Friday: Sausage and Bean stew
Saturday: Thai takeaway treat 😉

As you can see this week has already had one adjustment, Andrews Dad gave us half a pheasant and well I was eager to experiment with it – I’d never tried pheasant before and it was a pleasant (see what I did there) surprise. The sauce that I made to accompany it which is loosely based on the River Cottage Cock pheasant au vin recipe was delicious and rich.

I think I’m pretty good at using up leftovers and not overspending (most of the time) but I was still finding myself wasting a lot of vegetables and on occasions meat. It makes me angry at myself so this is a new way to try to stop that.

I am also finding that now most days Izzy will eat what we eat. This makes life so much easier.
I adapted a few of our dishes to suit her, in particular the meatballs in tomato sauce which we had with gnocchi on Wednesday I instead covered with mash from Tuesday and baked for her ..wow she loved it even pointing and wanting more.

As much as I love cooking sometimes it’s nice to take a break and order in, we are lucky to have the most wonderful Thai takeaway just minutes from our house so I’m excited to eat that tomorrow. Massamam curry is a big favourite in our house.

How much,how often and what?

The last few weeks I have eavesdropped on a few twitter/playgroup conversations about what people are feeding their babies/toddlers. There seems to be a major feeling of guilt amongst a lot of us parents over just what we feed our children. It’s a bit of a battle for me. I constantly wonder if she’s hungry or if I’m feeding her too little or not enough or just not the right food. I definitely think more advice on this is needed. I don’t mean recipe books although they are great I mean how do we know just what to do? I know when I am hungry and I know what I like to eat but with Izzy it’s a whole new big scary world for me (and for her of course)

I decided to keep a diary of what she eats. I then promptly forgot. I blame the old baby brain if I’m allowed I still blame that now that she is 14 months. So I didn’t keep a diary but this is more or less a typical day:

Between 6-7am : 6oz of milk – she’s not yet on cows milk which is something I kick myself daily about. Hoping this changes soon?

Between 8-9.30am : a fruit pot/piece of fruit and a slice of toast (sometimes with peanut butter which she loves..marmite not so much) as a special treat she occasionally has a croissant.

Mid morning: some snacks perhaps including raisins, cubed cheese, toddler crisps/biscuits or similar

Lunch 12-2pm : this differs more than most meals depending on where we are, if we are out and about I will mostly take a pouch but at home she loves pasta dishes, a mini chicken dinner, spag Bol or cottage pie. A lot of the times it’s what we (me and OH) eat the night before and I save her a serving. She normally has a little biscuit or bit of fruit afterwards. It used to be yogurts but they don’t seem to agree with her anymore.

Around this time she will also have a 4oz bottle and some snacks of carrot sticks etc in the afternoon

Tea 4-5pm: on most days this will be something like scrambled eggs/omelette with some baked beans. She also like carrot and potato waffles from asda or perhaps some fish or chicken. I do find that when she has more protein in this meal she sleeps better.

Supper 6.30-7pm : porridge every night. She loves her nightly porridge and its a big part of her bedtime routine as she has it watching in the night garden and getting sleepy.

Bedtime 7.30pm : 6oz of milk which she feeds herself in bed then puts herself to sleep. This is a new but miraculous development and we normally go in her room a little later and put the bottle away.

That’s just a standard day for us. What do you do? Is it rude to ask for your daily diary? I’d love to compare.

What foods do your children enjoy? I seem to have (at the moment) an adventurous eater and she will eat pretty much everything we try. Gnocchi and polenta are just two new dishes to add to her favourites list. She also has a very cute new habit of pointing at food that she likes and saying mmmmm unfortunately this means that my dad who is a sucker for a cute baba always wants to give her cake! I figure I am pretty strict with her sugar intake normally so I let him spoil her occasionally.

Wean your baby the Plum way

Back in June, organic baby food brand, Plum, ran a competition to win a sought after place at the
first ever Plum Cookery School.

Five lucky mums were invited down to Buckinghamshire where the Cookery School opened its doors to reveal some of the tasty secrets behind Plum’s recipes and offered expert advice to support parents through the weaning process. The cookery school was made extra exciting with two special guests, celebrity chef Rachel Allen and child nutrition expert, Beverley Glock, who were both
a great help and really lovely as you will see in the new weaning videos.

I was one of those lucky mums and myself and Izzy had a fab time.

Plum’s new videos are designed to ensure that other mums can take advantage of Rachel
and Beverley’s advice whilst learning lots of cooking tips, eating fabulous food and having many of
their weaning worries resolved.

Chicken In Garlic & Mushroom Sauce

Ok so most of you will already know that I am on a major diet at the moment and it’s working really really well.. I have so far lost 1stone and 3lb and I’ve been dieting since May 28th so I’m pretty proud of myself. There are two reasons I think it’s working well:

1. I am walking most days pushing a fairly hefty weight (baby, buggy and occasionally shopping) or carrying said baby around or playing about with her at home.

2. I am not depriving myself of everything. Most days I use myfitnesspal – I can’t really recommend it enough as it really helps me to keep an eye on what I eat. I limit myself to 1200 calories and keep it as low fat/sugar as possible however I still have treats and the occasional indulgent meals as I’m a foodie I love to cook and eat and I see no reason why I shouldn’t do that in fact I firmly believe it is helping me diet for longer!

After spending 2 days at The Plum baby cookery school followed by 5 days at Blissfields festival I was really missing home cooking so this past week I have cooked a lot. Mostly dishes I have cooked before such as vegetable curry and spaghetti bolognese ( topped with sautĂ©ed spinach and leeks- so good) but I am aiming to try a new recipe (from a book, online or friends) or invent a new recipe of my own each week from here on so last night I made chicken in a garlic and mushroom sauce now this is hardly a wondrous new invention of mine as chicken, mushrooms and garlic go together like strawberries and cream but I didn’t follow any kind of recipe and it turned out so well I would quite happily eat it every day this week.

Chicken In Garlic & Mushroom Sauce

Two large chicken breasts

Double cream-150ml

Butter ( small knob)
Red onion diced
2 cloves of garlic minced
8 mushrooms ( I used closed cup as that’s what I had but use whatever you like) chopped finely
Ground pepper ( I use a mix of black and pink peppercorns) and salt
Sprig of thyme
Olive oil

In a pan or small cazuela sauté your diced onion and garlic in olive oil and butter being careful not to burn the garlic, after a few minutes add your mushrooms and cook for 5 more minutes before adding your cream, thyme and seasoning. Remove from best
Heat a little olive oil in a large cazuela or pan which is ovenproof and pan fry your chicken breasts for a few minutes each side, pour over your mushroom sauce and cook at approx 190 deg or gas mark 4. After 20 minutes remove from oven and shred the chicken ( you can leave the breasts whole but I prefer it this way for this kind of dish) into the sauce before retuning to oven for 15 minutes. Remove from oven adding a little more pepper and serve immediately.

* I served with sauté potatoes, peppers and leek and a giant salad but I imagine it would be lovely with rice or mixed into pasta.

Chicken In Garlic & Mushroom Sauce

This is a fairly naughty dish for me as it has double cream but it was worth it and I didn’t gain any lbs. 🙂

Instead of a dessert I was inspired by a tweet I saw from Beverley Glock who was the food expert at Plum cookery school for a recipe for Pimms frozen cocktails.. Now the recipe she tweeted had lime sorbet as a base but I didn’t have any limes so I improvised and it was refreshing and tongue
tingling.

Eating On A Smaller Budget

Now that I am into my last 5 months of my year long maternity leave my pay has drastically reduced (aaargghhh) which means no (well less) luxuries and trying to keep to a shopping budget. I really love cooking so having less or cheaper ingredients to work with is not going to stop me. Here are a few tips on what to buy and eat on a smaller budget:

1. Firstly I changed the way I shop. Rather than buying everything at my local Asda or Sainsburys store I looked around and found the best places to buy certain products. I now try to buy all my fruit and vegetables in Lidl – there is a lot of snobbery about places like Lidl but I have found their produce to be better than any of the three major supermarkets. I buy most of my tinned/packaged goods at Asda and I try to buy my meat in Sainsburys as the quality there is the best and they do the same 3for ÂŁ10 deal as their competitors. Sainsburys is no longer the expensive supermarket in my opinion,in fact they have fantastic offers and I get nectar points so it’s all good!
I also buy frozen vegetables from my local farmfoods store as well as my milk as they are the only shop in my area which sells 1%milk which is so much tastier than skimmed but healthier than semi. Finally I buy my herbs, peppercorns etc from a fruit&veg shop in my local market as she has the greatest variety for a very good price.

2. I buy a LOT more beans ( not baked) Mainly butter beans and chick peas which are so versatile and tasty. I will share some of these recipes further along.

3. I buy a lot of items on offer and freeze them.

4. I try to meal plan as much as possible. When I started doing this I didn’t like the idea of having to eat a certain meal on certain days so now I choose 7 or 8 meals and write them on my white board on my fridge then just pick which one I feel like.

5. I bake less. I love it so much 🙁 but I still do it around once a week so it’s not so bad.
Also helping my waistline I think.

6. I buy large packs of pasta, rice and lentils. They seem to last forever and the cost per meal is very low.

7. I make my own dips and sauces. I make my own hummus, sweet chilli sauce and various others. Buying a big pot of hellmans light mayo and making my own thousand island, curried mayo etc saves me a fortune and is extremely simple- also mayo lasts around a month refrigerated whereas the shelf life of a shop bought dip is 3-5 days.

8. I buy good quality ingredients to accompany cheaper ingredients. So buying cheap pasta is fine but some products well you need to spend a little more. I buy extra special Chorizo which costs more than others but it’s fantastic and I use it down to the last tiny piece as it is so versatile. This month I have used it in paella,frittata,carbonara and @mycuntrymanor special eggs to name just a few. I also buy a decent olive oil as it makes a big difference.

9. I replace chicken breasts with thighs for as many dishes as possible. I buy the skinless, boneless ones and they still work out cheaper. Thighs are tastier and freeze well.

10. Try not to shop when hungry. I am automatically driven to the confectionary/bakery aisles if I’m hungry so I avoid if possible.

11. I don’t waste as much. Love your leftovers is the slogan for one of Sainsburys campaigns. Leftover cooked potatoes go in my frittata as do peppers, any veggies or meats. Bolognese sauce goes in the freezer to make up lasagnes or a pasta bake. Chicken left from a roast can make a curry or a simple sandwich. Stale bread gets thrown in the food processor and mixed with garlic powder to freeze ready for homemade coated chicken or for recipe below.

Butter bean recipes:

Creamy butter beans with a crispy topping

You will need:

1 small saucepan & 1 baking dish or a cazuela to use both on hob and in grill.
2 x 400g cans butter beans , drained and rinsed
100g light soft cheese (garlic and herb one if possible, if not add garlic&herbs of choice)
2 tbsp snipped chives
4 tbsp breadcrumbs
1 tsp olive oil

Heat the butter beans in a small pan for 3-4 mins. Remove a quarter of them to a bowl and mash with a fork until smooth and creamy. Stir back into the rest of the beans in the pan with the soft cheese and chives, then heat for a few mins more until warmed through.
Transfer to a small baking dish and sprinkle with breadcrumbs. Drizzle over oil and flash under a hot grill for 1-2 mins until the crumbs are crunchy and golden.

Griddled butter beans (side dish)

You will need:

1 griddle pan or cazuela
1 tin of butter beans (usually 400g) drained
1 tbls Olive oil
2 Garlic cloves or equivalent purée/paste

Bring pan with olive oil slowly up to a medium heat and add garlic stirring ensuring it does not burn, add butter beans and cook until lightly bronzed.

* This is a simple dish but you can add many things to make it a bit more special. I’ve added asparagus, bacon and peppers previously and all worked well.

Jamie Olivers butter beans with Bacon ( from 30 minute meals)

You will need:

1 griddle pan or cazuela
50g Bacon ( sometimes I use chorizo)
2 tomatoes
1 x 400g tin of butter beans and liquid
olive oil
Splash of red wine vinegar
2 or 3 sprigs of fresh basil, leaves picked

Heat your pan over a medium to high heat and fry the bacon in olive oil.
Chop your tomatoes roughly into cubes.
Once the bacon has started to brown you can add the tomatoes to the pan, followed by the butter beans including the liquid from the tin.
Let the mixture simmer on the same medium to high heat until all the liquid has dissolved and the tomatoes have broken down, stirring it from time to time so it doesn’t stick to your pan.
Chop up your basil and add to the butter beans once the liquid has dissolved. Add a bit of olive oil, about a tablespoon of red wine vinegar, and season.

*This is so good. So so good.

Chicken & Chorizo Paella

I love anything which has chorizo in it, it’s a beautiful ingredient which has the most incredible flavour and a little goes a long way.

Chicken and chorizo paella

You will need:

A paella pan or cazuela
Olive oil
400g Chicken cut into 1 inch pieces- thigh is best for flavour but breast is fine too.
Chorizo – you can use as much as you like here. I use about a third of Asda extra special chorizo sausage diced into small cubes
1 large onion diced
2 red peppers chopped
2 garlic cloves crushed
Some chopped red chilli or a squirt of fresh chilli paste
1.5 litres of chicken stock
2 teaspoons of smoked sweet paprika
400g paella rice – you can use other rice but it just won’t be the same.

*optional ingredients –
A pinch of saffron
2 handfuls of frozen peas.

Heat your pan slowly with about a tablespoon of olive oil.
Brown the chicken.
Add your chorizo, garlic and onion
When your onion is soft add your peppers, chilli, paprika (and saffron & peas if using) and after a few minutes add 1 litre of your stock.
Preheat your oven to gas mark 4.
Leave the ingredients bubble away on a medium heat for 15 mins.
Now add your rice and stir thoroughly.
Put lid on pan or a tinfoil roof if you don’t have one and place in oven for 15 minutes ( if your pan is not ovenproof simply continue to cook on hob but cover your pan)
After 15 minutes take the paella out of the oven and add remaining stock ensuring you give it a good stir.
Place back in oven for 15-20 mins and Tada you should have a beautifully cooked Paella.

I serve mine with a rocket based salad.

This makes a lot! It serves a family of 4 or 2 very hungry adults with lots of leftovers!
