Dark Chocolate & Coconut Bounty Bites

I’m a sucker for anything chocolate covered. Coconut is one of my favourite flavours so as you can imagine I’ve always loved Bounty bars. I’ve recreated them a few times but last night I get the texture of the filling just as I wanted it and covered with dark Belgian chocolate and sprinkled with coconut they are a perfectly indulgent treat. Also it’s Chocolate Week ..any excuse huh?

You have to use a good chocolate for these as otherwise it totally spoils the taste. You also need the majority of a tin of condensed milk so perhaps these should be an occasional treat rather than an everyday one!

You will need:

300ml of Condensed Milk
175g of Dessicated Coconut
200g of Dark Chocolate

Combine your coconut and condensed milk in a bowl until it all comes together.

Using your hands ( beware you will get sticky ) roll into small balls and place on greaseproof paper until it’s chilled and firmer.

Now melt your chocolate using whichever method you prefer, if I’m in a hurry I use the microwave in short blasts until it’s mostly melted then stir with a spatula until it’s molten.

Now dip your coconut balls into the chocolate, place back on the greaseproof paper and sprinkle over some coconut. Place back in the fridge to set, as soon as they are set place in a tub with a lid and keep refrigerated.

Coconut Loaf Cake

You may notice a theme starting here.. I’ve fallen in love. With the loaf cake. I’ve flirted with it a few times over the years but ahh it’s just so easy. Easy to slice. No fuss with the decoration as nobody expects a loaf cake to look anything more than rustic and just as much flavour as a standard cake.. You could even spread it with butter. While it’s still warm. So good.

I like adding coconut to dishes or cakes. Coconut milk in my rice to accompany jerk chicken, toasted coconut in my curries and sweetened desiccated coconut in cakes.

It’s perfectly good without a topping but I love to drizzle some melted dark chocolate over the top and sprinkle with a little more coconut. It just takes it up a level.

You will need:

225g Self Raising flour
175g butter
175g golden caster sugar
125g sweet dessicated coconut
3 Eggs
30ml of milk

Topping:

100g Dark Chocolate ( I used Green & Blacks )
25g of dessicated coconut

Preheat your oven to gas mark 4.
Cream your butter and sugar together until fluffy. Add your eggs, one by one and beat until you have a smooth mixture. Add your flour and mix well. Finally add your coconut and milk and best until combined. Pour into a greased 2lb loaf tin and bake for 50 minutes or until a skewer inserted to the centre comes out clean.

Leave to cool.

Melt your chocolate and drizzle over the top of your cake, don’t worry about being precise or making it pretty. Sprinkle over your coconut. Serve immediately or leave until chocolate hardens.

Dark chocolate and Maple Syrup cookies

Tonight after a fairly large evening meal I wasn’t hungry yet still really wanted something sweet. Of course I didn’t fancy the homemade ice cream, lollipops or Thorntons chocs which were already in my kitchen but I suddenly wanted cookies OR something with maple syrup on. I was also feeling fairly lazy after a long, tiring day so I decided to just spice up my usual cookie recipe with some adaptations and woohoo if it didn’t work out perfectly. Dark chocolate and maple syrup cookies – the dark chocolate stops its being too sweet whilst the maple syrup helps to create a perfectly moist cookie which holds together well. I am creating some pretty lovely recipes whilst being pregnant.

Of course I decided to share the recipe with you and quickly while its fresh in my mind and baby brain doesn’t kick in so here it goes:

Dark Chocolate and Maple Syrup Cookies

You will need:

100g softened butter ( now margarine would be ok but I feel strongly that you should use butter 😉 )
75g light brown soft sugar
30ml of full fat milk
75g of dark choc chips ( I used Asda basic dark chocolate 30p for 100g)
30ml of maple syrup
175g of self raising flour

Preheat oven to gas mark 4 (180)
Cream your butter and sugar together in a large bowl. Stir in the remaining ingredients and mix well.
Put 15 dollops of your mixture onto your greased baking trays,flatten slightly and bake for 10-12 minutes.

The raw cookie dough is pretty tasty..and with no eggs it’s safe for pregnant women and children too 😀

Remove from tray and cool on a wire rack.

* The cookies will still feel very soft when you remove from the oven but they are done and will firm up on the wire rack 🙂

These are so super simple to make.. the whole process from weighing the ingredients to taking a bite took less than 30 minutes and they were so delicious. I highly recommend you give them a whirl.
