Christmas Gift Guide For Kids

It’s that time of year when children everywhere are making their Christmas wish lists. Chloe is still a little young to make demands and Izzy doesn’t ask for much yet which is nice and I’m going to enjoy it while it lasts.

Food Blogger Of The Fortnight – Penne For Your Thoughts

Penne for your thoughts

I started blogging a few years ago, and last year Penne For Your Thoughts was born! I’ve always had a passion for food, and cooking/baking and wanted to combine my love of writing with this. The blog was born, and I haven’t looked back since. Whilst it is time consuming, especially with a full time job, I absolutely love the food blogger community – the advice and support from everyone is what keeps me going! Over the past year my blog has given me the opportunity to learn more about baking, cooking and especially photography! When I look back at old posts and the photos they make me cringe. It’s lovely (although still a little surreal) to know that everyone from friends and family, to complete strangers are reading my blog and making my recipes.

My most popular recipe is my home-made version of the Mr Kipling Angel Slices. My absolute favourite childhood treat!

Happy Birthday Chloe

Happy Birthday to our beautiful girl, you are two today.

You learnt to count to 10 a little while ago but the way you say six ( seeeeeehhhhheex) and seven ( sevannnnnnnnn ) still crack me up.

You love to sing and dance and pretend to read me stories from your favourite books. You are more generous with your hugs and kisses than anyone I’ve ever met. If you think anyone is sad or upset you run over, rub their back and say “Don’t worry ..you’ll be alright”.

If I tell Izzy off for anything, even for snatching a toy from you or being a little rough you defend her and tell me No whilst hugging your big sister. You adore her.

You say the funniest sentences and have a wicked smile. You can always, always make me laugh even when I’m having a really bad day.

You have been through a lot in your first two years and dealt with it like the little trooper you are. You put up with others eating things around you that you can’t have and rarely get irritated by it.

Unfortunately you STILL don’t sleep through the night but as everyone says it will come.

Happy Birthday to our little Chloe. We love you more than you will ever know.

Birth Trauma Two Years On…..

Two years ago today I was in ( very ) slow labour with our second daughter. I had already been in hospital for 3 days and I was more than a bit emotional, exhausted and anxious.

The following day at 8.30pm Chloe arrived. Perfect in every way. Considering all of the problems that we encountered during the pregnancy it actually felt like a bit of a miracle that she had arrived, not too early ( in fact ..late! ) and healthy.

Unfortunately the birth was incredibly traumatic. I can’t go over it again and you can read a little about it here but it was a dark period of time in my life, of course when Chloe arrived I was overwhelmed with joy that she was ok. She fed immediately, we bonded straight away and she was of course worth every bit of the torture I felt I had endured.

 

Chloe The difference between our first daughters birth and Chloe’s birth was that after Izzy arrived although birth had been difficult and long I knew I could do it again. After Chloe arrived I knew it would be impossible to ever do it again.

I assumed these feelings would pass and that the memories of the birth would fade along with my afterpains – why does nobody warn you of how bad the afterpains are after your second?!?

They didn’t. In fact they got worse. I was weepy all the time…I blamed my milk coming in, the baby blues and eventually the tiredness of having a baby and a toddler. The nightmares from the birth I put down to my unsettled sleep pattern as I woke to feed Chloe throughout the night.  The flashbacks and black thoughts were masked by the happiness and love I felt for our beautiful girls. Life should have been perfect.

I started to get counselling as I knew I needed it.

As weeks turned into months I knew that time should be fading my memories and stopping the way I felt but instead I just began to feel lower and lower until when Chloe got to just over 1 year old. I lost my appetite ( most unlike me) I was incredibly depressed and suddenly it was New Years Eve and I felt distraught. I had told myself in the lead up to Christmas  that a new year would bring a fresh start but instead I knew I needed to do something more.

As Chloe was now old enough I knew I could stop breastfeeding although I had wanted to continue much longer and I took medication to help myself. I tried several medicines as my body kept reacting violently to them until eventually my body let me keep one in my system. I also started therapy called EMDR which trains your brain to put traumatic thoughts into the depths of your memory so they are still there but not always on your mind.

It helped. The flashbacks lessened, the sleep paralysis started to become less frequent and my mood began to life. Not every day but at least some of them.

But I still don’t know if it will ever go. I can’t watch labour scenes in films or TV without getting upset. My sister in law had a baby 4 months ago and I was anxious every time she mentioned labour. While she was in labour I felt overwhelmed, checking in with my parents constantly to find how she was. This happened again a few days ago when one of my closest friends was giving birth. I messaged her all day long ( how it must have annoyed her ).

I hope one day this will be less of an issue for me.

Two years on I do feel like I’m getting there. The light is visible at the end of the tunnel. Chloe is two tomorrow and a wonderfully happy and utterly hilarious little girl. Along with her sister, Andrew and my parents and family my days are brightened and I’m supported and loved.

It’s really important to know how difficult birth trauma can be and to support friends and family through it. Encourage them to get counselling and medication if needed. If you are suffering from Post Traumatic Stress following birth I can tell you it may not vanish but it really does get better.

Globe Trotting With Glorious Soups

Ah it’s been such a long time since I experienced exotic food in balmy temperatures. The last time we travelled abroad was around four years ago and that was a fairly tame trip to Portugal in Winter to avoid our then first baby girl getting too hot ( new parent worries hey? ).

Whilst I love being a parent and a responsible adult and all that jazz I do yearn for the days when we would just book a last minute flight and pop over to sunnier climes for a piña colada or our more considered plans to visit Africa to grab mangoes fresh from the tree.

Or to meet new animal friends, meet people from all walks of life, listen to the musical beat of a country and breathe in it’s unique scent.

This month I’ve been trying some of the Glorious Soup range and letting the flavours sweep me along on an adventure. They may not be able to promise the weather or indeed the relaxation – my last bowlful was eaten whilst balancing a poorly toddler on one knee and reading a book to my eldest – they do however deliver every time on taste and taste can take you places.

My favourites so far:

Fragrant Thai Carrot – Thailand has always been on my list of places I want to visit and I love the flavours of typical Thai dishes. Echoes of lime, coconut and lemon grass ensure this soup really is fragrant and leads an all so pleasant dance around your taste buds.

Next up is the Bangalore Lentil Daal– I chose this because two of my best buddies are currently travelling the world ( not jealous at all…… ) and they recently spent a chunk of time in India. The photos of their visit were incredible ..it does help that Ceri is a pretty awesome photographer and it really did tell me a tale of the people who live there and the food they eat.

Years ago I used to hate lentils. I think I thought they were the type of food your mum would trick you into eating when you were a child. That changed the first time I had Daal. Lentils were no longer boring or sludgy but filling and warming..able to carry so many spicy flavours. The Glorious Bangalore Lentil Daal has both lentil and chickpeas flavoured with garam masala, curry leaves and mango chutney. I can imagine walking through the streets eating this steaming hot from a bowl while soaking in the atmosphere in the busy streets.

And finally the New England Butternut Squash.. For no other reason than ahhhh Butternut Squash. It has to be one of my favourite Autumn veggies. This soup contains roasted butternut squash and cumin and has a bonus point for having less than 1% fat.

Strangely all of my favourite soups this month were from the Skinnylicious range. Must be my current healthy eating plan guiding my shopping picks! Next month I’ll be trying some more Glorious goodies so check back in a few weeks.

Every year the BBC Good Food Show in Birmingham NEC is one of the highlights of November for me. Stallholders have festive offerings as well as their usual products and it gets me in the mood for Christmas, I buy gifts for my family and try so many samples that I’m usually too full to have lunch. It’s also fun to meet some familiar faces:

Stall holders I’m definitely heading to include:

Hedonist Bakery – they sell artisan breads which you can freeze to finish baking yourself at home. We have tried one at home recently and they are truly delicious!

Taste Gourmet Spice Gran Reserva Balsamic Vinegar – I bought a bottle of this last year and it was delicious so I was delighted when they sent me a bottle this year!

Mellow Yellow Rapeseed Oil – This makes amazingly crispy roast potatoes and great for salad dressings too.

Munchies Seeds – I have bought these lots this year and they are handy ( and healthy ) snacks to keep on my desk to nibble on through the day.

Swifts Bakery – ah I’ve bought bread from Swifts every time I head to the show, Winter and Summer. It’s perfect. My favourite is the chilli, lime and coriander and I hope it’s there this time!

In previous years I’ve enjoyed heading to the Supertheatre to watch some of my favourite celeb chefs in action. I’m hoping to take a look at some of the new products from some of my favourite brands like Kenwood as well as nibbling my way through all of the cheeses and brownies in the hugeeeee hall at the NEC. I also love browsing stalls and trying things I’d never have tasted otherwise. The Garlic Farm always tempt me with their garlic pesto and smoked garlic bulbs.

A Luxury Break At The Celtic Manor & A Chance To Win Afternoon Tea

We were recently invited to review a night and dinner at The Celtic Manor and what a stay it was. Stepping in to The Celtic Manor is like entering a haven of luxury and calm. The lobby is impressive and the reception area also includes a mall where you can purchase an array of Welsh goodies. Considering it is a large and busy hotel it could easily become impersonal and cold but this resort is far from that. Every guest is taken care of in the same manner and every inch of the hotel is designed to be beautifully modern and relaxing.

We have stayed at The Celtic Manor previously and having stayed in two different standards of room I can confirm that the rooms are comfy, spacious and full of the finishing touches you would expect from a 5 star hotel. The bathroom has spa favourites Elemis products for you to pamper yourself with, robes and slippers are also provided for you to wear if you fancy a trip down to the pool and spa area.

A fully stocked mini bar and complimentary tea/coffee tray are in each room as well as incredibly comfy beds and armchairs for you to relax and watch the world go by from your balcony.

I enjoyed two long luxurious soaks in the gorgeous bathroom using my Elemis treats. It was so nice to have some peaceful pamper time.

The true highlight of our stay was our visit to the Terry M restaurant based in the hotel. On our previous visit we had eaten in The Olive Tree and enjoyed the all you can eat 3 course dinner buffet there – the quality of the food was fantastic but Terry M is on a different scale altogether. The three AA Rosette flagship restaurant presents intricate seasonal dishes created by head chef Tim McDougall, feature the finest locally sourced ingredients for fresh, intense and mouthwatering flavours.

We decided to try the 6 course tasting menu.

We enjoyed canapés and an amuse bouche to start..and a glass of champagne of course!

At the end of the meal we were presented with this delicious plate of goodies. The chocolate lime Macarons were the best I’ve tasted and tasted EXACTLY like chocolate lime sweets from my childhood..the palmier was pretty awesome too.

The next morning we enjoyed breakfast in The Olive Tree and it was just as good as any other meal we have experienced there. There is such a wide variety of food on offer, from green smoothies ( delicious), pastries and cakes of all kinds – even freshly made welsh cakes, full English of course, cereal and the most amazing fluffy pancakes with crispy bacon and oodles of maple syrup.

After breakfast we hit the pool and spa area. We had a good swim about ( to work off our over indulgence ) then lazed about in the his and her spa areas. After we checked out we didn’t want our stay to be over too quickly and relaxed in the bar/lounge area with a mug of hot chocolate and some books. Perfect end to an incredibly perfect stay.

We have also enjoyed afternoon tea at The Celtic Manor in the Summer and it was one of the best afternoon teas I’ve tried ( and I’ve had a few ) a great balance of both sweet and savoury dishes and they catered so well for my gluten intolerant sister.

Life Is A Playground

Life is weird. Never the same. Unpredictable. You could think of your life as a playground.

Take the Slide. One minute you are at the top..the next the bottom. Often in a puddle of Autumn rain. We have had lots of ups and downs in our family over the past 4 years and at times when we are up I still worry that it will be all over too soon.

The Roundabout. Ah I think we all know sometimes it can feel like the world is spinning all too fast and we just want to get off the roundabout because to be honest we are just starting to feel dizzy.

The Swings. Sometimes life is an utter joy. You feel like you are way up there amongst the clouds and like your feet will never touch the earth you are so happy.

Then there is The Seesaw and this is really what this blogpost is about. Life is generally one big balancing act. Unless you are of the magic age between perhaps 0-late teens of course.

If you are working there is the much talked about work/life balance. Having the correct work/life balance is the dream for most people. Some lucky ones seemed to have it all sussed but these are few and far between.

At the moment I feel like I’m balancing too much and often the seesaw is heavier in one part than I would like it to be.

Here are a few things that most of us grownups have to balance:

Family – whether you have children or parents or siblings that you care for this is a big one and the most important.

Love  – be it a husband, wife, boyfriend, girlfriend, life partner or maybe you are just starting to look for The One. Taking time for this is a requirement for a happy life. Have fun together. Laugh. Watch films. Take walks. Eat.

Work – most of us have work commitments or university or college work to take care of – perhaps both for some. Unfortunately to be able to support our families we have to work. It’s not fun and I imagine a great deal of parents would rather spend more time with their little ones but it is what it is.

You – ah the magic me time. Again something I consider to be important for your sanity but not always possible. Try and snatch 15 minutes here and there. A long bath, an exercise class or a coffee with a friend. Small things can make a big difference to how you feel.

Your home – it’s easy to say that having a clean house is not everything but even if you are not an obsessive cleaner ( I’m not ) then you still have laundry, cooking, bills to take care of and lots of other small yet time consuming tasks.

So how do you do it all? How do you manage to be the perfect mum, partner, daughter, sister, employee,housekeeper, cook..the list goes on.

I guess I’ve discovered recently in a moment of clarity that you don’t. You cannot be perfect at everything but you can be really good at the things that matter. I strive to be a good mum. Everything else I try at. If I succeed at being amazing at lots of things then great. If I don’t then I’m trying to stop beating myself up about it.

Some weeks I will have the sparkly house from the Good Housekeeping magazines ( those weeks haven’t come yet ) other weeks I will spend every minute trying to make my children’s days fun and full of good food and love. Some weeks I will want to run away and spend 60 whole minutes of just being me ..not a mum, not an employee ..just me. That’s ok. I get that now.

What matters I think is that I continue to try. I hate my job yet I’m still there. For my family. For my home.

I’m not naturally organised. Yet our bills are always paid. School uniforms always clean. Nutritious food is always on the table. I spend a good chunk of my days at home cuddling up with our girls which means some days I don’t get a lot done but really when you look at the big picture I achieved so much and I’m lucky to have all that love in my life.

I read this quote a while back from the CEO of Coca Cola:

“Imagine life as a game in which you are juggling some five balls in the air. You name them – work, family, health, friends and spirit and you’re keeping all of these in the air. You will soon understand that work is a rubber ball. If you drop it, it will bounce back. But the other four balls – family, health, friends and spirit are made of glass. If you drop one of these, they will be irrevocably scuffed, marked, nicked, damaged or even shattered. They will never be the same. You must understand that and strive for balance in your life”

It’s really stuck with me. I know what’s important and what to prioritise.

Everyone has a friend, colleague or fellow school mum who seems to manage it all but remember it’s pretty impossible. Something has to be missing. Don’t be jealous of what you don’t know.

And so that is why I think life is a playground. I don’t know about you but I’m just about ready to jump back on that roundabout.

Chocolate, Chai & Banana Milkshake

Whenever we have milk that needs to be used it always tends to end up in some kind of milkshake or hot chocolate experiment. You may have noticed recently that I am a little bit in love with Chai so I decided to try making a milkshake including three of my favourite ingredients. Chocolate. Chai. Banana.

This is just chocolatey enough with a hint of banana and a layer of warming spice. It makes enough for one larger glass and a smaller serving..perhaps for a little one?

You will need:

Approx 400ml of milk
2 tbsp Chai Latte powder ( I used Baru Spicy Chai Latte )
2 tbsp Cocoa Powder
1 large ripe Banana ( chopped)

Chocolate chai milkshake

Pop all ingredients into a blender and blitz until smooth. You can sweeten if you like but I find most chai powders are fairly sweet anyway.

Take this up a notch with some vanilla whipped cream on top and a dusting of cinnamon..or make it even more indulgent with a scoop of chocolate icecream thrown in to thicken it up.

Enjoy it straightaway with a few biscuits…of course.

*In order to test this recipe thoroughly I tried warming it up and drank it as a hot chocolate which was surprisingly tasty but I definitely prefer it as a shake.

Strawberry & Basil Soup – Jamie Oliver Superfood

There has been a bit of a craze for smoothie bowls and fruit soups lately. The new Superfood book from Jamie Oliver includes a few options for variation on these as well as added extras such as granola dust.

I tried out the Strawberry version at home yesterday and it was delicious.

The Superfood book is a completely different book to any of the other Jamie Oliver books that I have and I’m really enjoying making my way through it.

Here is the recipe but I do highly recommend that you buy the book and try some of the others out too.

Strawberry Soup:

100g of hulled Strawberries
1 tsp of Balsamic vinegar
8 Basil leaves
2 tsp of Chia Seeds
1 mug of boiling water
* drizzle of runny honey (optional)

Place all your ingredients into your blender and blitz until smooth. Pour into a bowl and either eat while warm ( which is surprisingly good ) or chill to eat later. Can also be poured into a glass or travel cup for an on the go smoothie.

There are lots of way you can add your own twist to this, from topping with yoghurts and fruit to adding a drizzle of fruit compote although I quite like it plain with just some basil on top and a few tiny droplets of balsamic.
