Rosemary Shortbread Cake

Sometimes kitchen experiments don’t go as planned but they still turn up something incredible. This Rosemary Shortbread cake is one of those. I was attempting to make a rosemary shortbread but I used a smaller baking tray than I normally do which meant that the dough was in a thicker layer than normal resulting in this almost cake.

It’s delicately flavoured with Rosemary, buttery and slightly sweet.

Ah it’s just so good. Try it, you won’t be disappointed.

Rosemary Shortbread Cake

You will need:

1 heaped tablespoon of finely chopped fresh rosemary ( plus some small sprigs for decoration )
Pinch of salt
150g butter
50g of caster sugar
1tbsp of golden syrup
250g of self raising flour

Preheat your oven to 180C.

Grease and line your deep square baking tray ( about 20cm ).

Cream your butter and sugar together, add your chopped rosemary and beat together.

Rosemary shortbread

Add your flour and salt. Mix together just to combine, turn onto a floured surface. Knead gently for a minute or so until you have a smooth soft dough.

Press into your baking tray, score lightly into squares and press some rosemary sprigs into some ( or all ) of the squares. Bake for approx 20 minutes until it’s lightly brown and bounces back when pressed.

Remove from the oven, leave in tray until it’s almost completely cooled before removing.

These are best served on the day they are made, they are still tasty a day or two later but not quite as good.

Can I just say this has made me want to add rosemary into ALL of my cakes? Luckily it’s in abundance in my herb garden.

Life Must Be Easy For A Coeliac

It’s not often that I will comment on an article from the Daily Mail Fail but today’s headlines angered me.

If you didn’t see it here is a quick screengrab:

It’s the type of article which really doesn’t help raise awareness of how serious an issue Coeliac Disease is. Because it’s not a fad or someone trying to lose a little weight by cutting out bread. It’s not a choice. People with coeliacs disease cannot eat any gluten. Ever.

Our local GP along with pretty much every GP discussed in a Coeliac forum ( of thousands of coeliac sufferers ) does not prescribe anything which can be classed as junk food. Which can only make you question where on earth this headline has come from. Yes some surgeries offer a flour mix with which you can make bread – this mix can also be used to make cakes, doughnuts and the like. Yet the surgery offers it to make bread. They cannot control what people make from it. Nor should they. This mix is typically offered in cases such as Chloe’s ( prior to the successful reintroduction of egg ) where a suitable loaf can’t be offered due to multiple allergies.

For those who like to know..Chloe receives a loaf of bread ( previously it was a mix which I then made up and baked ), a bag of pasta and some plain rice puffed cereal. This is to help us as a family manage some of the absolutely exorbitant prices that come along with eating gluten free. It barely scratches the surface but we are grateful that our wonderful NHS can offer this to us.

We are additionally unlucky in the sense that Chloe also can’t tolerate dairy or soya (we had tried a soya reintroduction which didn’t work). This is common of a lot of coeliacs – extra intolerances or allergies. It’s almost impossible ( or so it seems ) to find supermarket products that are free of gluten, dairy and soya. It means that I can’t just grab a packet of biscuits from the supermarket. I can however buy her a single (plain) gingerbread man for £2.00 – that’s right, if we want to treat our daughter to a simple biscuit we are paying about 4 times the price of an entire pack of standard biscuits ( based on packets of Oreos at Asda today – 50p a pack ). If I wish to buy her chocolate at Christmas or Easter it’s roughly £2 – £2.50 for a bag of buttons ( same size as a small bag of the cadburys ones – 3-4 times more expensive ). I also have to order these online as they are not stocked locally.

On the whole we prefer both of our children to eat healthily, fruit, veggies, meat and potatoes/pasta etc. But we are far from perfect. We believe children should have treats. Our monthly grocery shop has tripled since Chloe’s diagnosis. Tripled. Our wages have stayed the same. Try to imagine how you would absorb that cost. It’s hard. Really hard. And have I mentioned how much longer shopping takes? We read the labels on everything. Even products we have bought before because ingredients change, factory processes change. It’s exhausting.

Definitely worth it to see this look of glee after a simple slice of cake:

Normally I would just ignore this type of news story. Let myself take the higher ground with the knowledge that it’s not correct but after so much discussion on the matter today – including well known TV presenters ( shame on you ) I just felt so annoyed. I did a supermarket shop this afternoon whilst angered and almost cried whilst reading tiny ingredient lists over and over again.

If you don’t know much about Coeliac Disease then take the time to find out. Don’t let these headlines cloud your judgement or make you feel frustrated at how your taxes are spent.

Think of how you would feel if it was your child or you. For most people with this lifelong auto immune disease these prescriptions are like medicine. A necessary part of their day to day lives and who knows how many would be in real financial difficulty without this support.

Life is far from easy for a Coeliac.

Finding Me

When people say you lose your identity a bit when you become a parent I used to wonder what they meant. Surely parenthood doesn’t change you that much.

But it does.

Suddenly everything you want, everything you plan for the future totally revolves around someone else ( or two someone elses in our case ) – this is exactly as it should be of course. They are and definitely should be the most important parts of our lives.

But there should still be you in there too.

I mean you have the working you – the parent who works to provide for his/her family. Because if I didn’t have children then I certainly wouldn’t be still in the job I’m in. I’m there because it has benefits and regular, consistent pay. I can’t take huge leaps into exciting opportunities because if it goes wrong we still have a house to pay for, food to put on the table.

The relationship you – yes we are still together. But it’s different. You don’t get the one on one time anymore. The hours just to chat. Every part of your life that exists outside of parenting is crammed into a few short hours each evening and even though you know you should be focussed on your other half sometimes there is just too much to do.

The daughter you – to be the child. Until you have your child you always feel like you are one. To depend on your parents. To know that if things go wrong you could go back and live in your old bedroom or sleep on the couch. To feel less responsible.

The old you. This is perhaps the hardest you to lose. Your old body before you house your babies in it, your face before it became tired and stressed. Your clothes which were stain free and never wrinkled. Your hair with its regular attention and cuts. Your carefree life. Lunchtime at the pub which stretched into a full day of laughter and cocktails. The hours you could spend curled up with a good book. The late nights you could enjoy knowing you would sleep all night.

It takes a while, years sometimes to accept the new you. Yes you have lost your old identity. But you have a new one.

The working you – who has two gorgeous and happy faces to come home. Who is missed. Who always has something to look forward to at the end of a working day.

The relationship you – you don’t get much time together anymore but you spend hours laughing at your children. You are a family . You understand when the other one has things to do, you know that time without the children is also time to do 101 tasks. It’s a different you. It’s not a bad you. You have been through things and come out the other side. Seen each other at vulnerable, difficult times yet still can laugh and joke.

The daughter you – yes you aren’t the child anymore. You will always be their daughter but you have grown up. Yes I couldn’t go back to my old bedroom ( a bit of a squeeze with two kids ) but I still depend on them in many ways. To see my children loving my parents is one of the most amazing things I have ever experienced. To finally understand what it means to be the parent. To get how much they worried. To love them even more for knowing what they have done for you.What they have achieved in bringing you up. To realise how lucky I am to have them as my parents and still so present in my life.

The old you – yes she’s gone. You grew up. You have toddlers and small ones. Your clothes are grubby, you hair is wild. Your eyes are tired, your heart is full. Spilling over in fact. You never knew you could feel so much love. So you miss out on days at the pub. You gain a million smiles, laughter and did you ever know how it felt to have someone love you so unconditionally. Whose tiny face lights up every time you step into a room and who declares at least once a week that YOU are the best cook in the world. To feel a small warm body curled up in your arms gazing up at you or sprawled all over you blowing raspberries on your belly. This is what counts. That old you. She didn’t know. The secret. This, this is what’s all about.

Apple & Carrot Crumble – Dairy & Gluten Free

I was planning to make a crumble today and give Chloe the filling but not the crumb topping and I stopped for a moment and thought hang on how is that fair? I mean it’s pretty frustrating when we can’t give her everything she wants as it is but when I’m making things from scratch for us to eat as part of a family meal I should always at least try to adapt things for her.

So I did, I made a crumble which was both dairy and gluten free and you know what? It tasted pretty good! Also it has both fruit and a vegetable in it which means it’s at least two of your 5 a day…right?

The girls both enjoyed, as did we and it felt nice to all be eating exactly the same meal. Adding a carrot to the crumble made little difference to the taste, after all carrots are fairly sweet but I had lots I needed to use up and it felt good to throw an extra veggie in.

Apple & Carrot Crumble

4 small apples, cored and diced
3 tbsp of water
1 carrot ( finely grated )
1/4 lemon zest
5 tbsp of Gluten Free Flour
5 tbsp of Demerara sugar
1 heaped tbsp of dairy free spread ( I used an Olive Oil based spread )

Preheat your oven to 200C.

Simmer your apples in a small pan on the hob with 2 tbsp of the sugar, the water and lemon zest. When they have begun to soften add your grated carrot and cook for a further few minutes.

Rub the spread into the flour until it resembles breadcrumbs, it should look like this:

Now add 2 tablespoons of the sugar to the mixture.

Set out 4 small ramekins ( you could use one small baking dish instead ) place equal amounts of the filling in each ramekin and top with the crumble mixture. Use the final tbsp of sugar to sprinkle on top of the mini crumbles.

Cook for about 15 minutes in the oven until they look golden brown.

It didn’t taste much different to any other crumble I’ve eaten, perhaps a little less buttery but it was delicious all the same. In fact there were 4 clean bowls here!

This crumble is gluten, dairy, egg and soya free.

Roasted Shallots With Rosemary

I love Shallots. I have a bit of a thing for them at the moment. They are easier to peel and have a slightly more delicate and sweet flavour than onions.

My favourite way to eat them is roasted in olive oil with some herbs. I often pop them alongside my Sunday roast to cook in the juices of the meat which is just amazing but they are also really simple to make as a standalone dish.

Roasted Shallots With Rosemary

You will need:

5 -6 shallots (leave some whole and slice some in half lengthways)
2 tbsp of a good quality olive oil
3-4 sprigs of Rosemary
Sea salt
Crushed Black Pepper

Preheat your oven to 200c. Place your shallots into a small roasting dish, place the rosemary sprigs on top, pour the oil over and sprinkle with salt and pepper. Cook for about 30-40 mins.

They are delicious served alongside meat as a vegetable accompaniment or even just with some crusty bread and cheese.

You will make these again and again. I know I do!

The Perfect Pizza & Garlic Bread Dough

A few months ago Andrew completed work on our Outdoor Pizza Oven. It’s been a work in progress for quite a while now as it’s been hard finding the time to finish it. But he did it and it’s brilliant.

We often use it to make easy flatbreads (I tend to use the River Cottage recipe for this as it’s so easy)

We have also been experimenting with different types of pizza dough to get the perfect crisp yet tasty finish and this is the one that we think is perfect. You can’t rush this dough as it needs time to rest so plan ahead. It always freezes really well and we often pull a ball of two out to defrost in the morning ready for fresh pizza that evening. The pizza is incredible of course but my favourite way to use this dough is to make garlic flatbreads. Once you have tried this then supermarket versions will never be the same for you.

This is great in Outdoor Pizza Ovens but also gives great results in a conventional oven.

Perfect Pizza Dough

You will need:

500g of 00 Flour
300ml of cold water
1g of Fresh Yeast – most supermarkets will give you fresh yeast for free. Ask in the bakers section where they slice your fresh bread for you.
15g of salt

Add your yeast to the water and let it sit for a minute or so. Place your flour into a large bowl and add your yeasty water into a dip in the centre. Use your hands to bring some of the flour into the water until the water is thickening and add your salt before bringing in the remaining flour. Continue to mix with your hands to form a dough. Knead for about 10 mins.
Cover and leave for 15 minutes. Now knead again quickly for about 30 seconds.

Divide the dough into four balls, place in a deep dish, sprinkle with flour and cover with cling film. The dough will double in size so leave plenty of room between your balls. Leave to rest overnight.

Now the dough is ready to use.

Place on a really well floured surface. Use your fingers to press the ball out, start in the middle and push out to the edge leaving a ridge around the outside. Turn over and repeat the process. Now stretch the dough out as much as you can without it breaking. Your base should now be about 10 inches in diameter.

You are now ready to top. For pizza we like covering with Cirio double concentrate to tomato purée for convenience then sprinkling with herbs and a few toppings finished with cheese and a tiny drizzle of olive oil.

For the garlic bread we combine butter with garlic purée and some diced fresh herbs and spread over the base. If using a pizza oven this will take just a few minutes. Keep a close eye on it. In a conventional oven at about 200C it will take about 8-10 mins.

This makes the best pizza. Seriously give it a go. We never buy store bought pizza anymore. Once you make a batch of dough and freeze it then this couldn’t be simple to just sprinkle with toppings and bung in the oven.

The Launch Of Forever Friends New Range At The Ritz

Did I tell you I went to brunch at The Ritz last month? Well I did. It was to check out the new range of Forever Friends products launched by Golden Bears.

Let me tell you brunch at The Ritz is pretty good:

Forever Friends were pretty cool when I was younger. Everyone had one of the pencils/pencil cases/mini bears. If you had a school valentine gift it was normally FF themed.

It was great to see the new products and to learn a little more about Golden Bear as a brand. The new line of products include some fabulous additions for babies. I particularly liked the soothing sounds bear which has a soft warm glow and various white noise type sounds to lull your baby to sleep. There are also snuggly type toys with the little tags attached which babies loved to play with. I especially liked this fellow:

Although there was no way I’d have wanted to take him on the tube home.

There are also toys suitable for older children, Izzy liked this one which you can slip a photo into ( its secured so won’t pop out ) and I think that’s suitable for toddlers and young children. Both my girls love to squeeze him.

It was a really lovely morning both visiting The Ritz ( a new experience which unfortunately won’t be a regular one ) and seeing the Forever Friends range. Go check it out.

The Pemberton Beefeater Review

Last month we visited the newly refurbished Pemberton Beefeater restaurant in Parc Pemberton, Llanelli. It had been quite a long time since I had last visited a Beefeater pub so I was interested to see what changes had been made.

The first thing that struck me was the decor, it has totally changed from looking like any other chain restaurant to being a smart yet comfortable place to enjoy a family meal. The open kitchen appealed to the foodie voyeur in me and the friendly staff made us feel right at home.

It’s here actually that The Pemberton excelled. The staff couldn’t do enough for you. Yes I’m sure they knew we were there to review but every table was treated with the same attention to detail and cheery demeanour. They knew all about the new menu and the recommended dishes and our children were both fussed over and spoiled with activity packs.

When it came to ordering I knew I wanted a burger. I could smell the grill and I would have been disappointed if I had chosen to go with something else but what to start with…

I chose potato skins with a sour cream dip whilst Andrew chose loaded nachos. Izzy had some vegetable crudités which she really enjoyed munching on while creating some artistic magic.

For our mains we both went for burgers with fries and slaw whilst Iz chose chicken pieces with fries and beans. For desserts Andrew opted for an ice cream sundae whilst Izzy enjoyed some ice cream and I opted for a retro Blackforest gateau which was a very generous slice and it defeated me but what I ate was so good!

In fact all of our meals were great, freshly cooked and seasoned to perfection.

Overall we left impressed with the quality of food, the ambience of the restaurant and the eager to please staff. I’m sure we will return.

Slow Cooker BBQ Chinese Chicken

I’ve been sent a range of sauces from Lee Kum Kee to try out. If you haven’t yet tried products from Lee Kum Kee let me tell you a bit about them:

LKK was established in 1888 so it has a rather magnificent 125 year history. Starting with just Oyster sauce it now has a range of over 220 sauces and condiments.

So far I’ve used both the Char Sui sauce, the sesame dressing and the Chilli Oil.

I created a really easy BBQ style Chinese Chicken which is cooked in the slow cooker before finishing off on the BBQ, Grill or Oven. As our British Summer has officially sucked when it comes to weather we of course had to use the oven but we still had amazing results.

BBQ Chinese Chicken

You will need:

5 Chicken thighs – I used thighs with the skin still on and bone in for extra flavour
3/4 of a jar of Lee Kum Kee Char Sui sauce
1 tbsp of Chinese 5 Spice

*This served 2 hungry adults with leftovers.

Marinate your chicken in 1/2 of the jar of sauce,cover and refrigerate for a few hours.

Place in slow cooker on high for 3.5 hours.

Before removing from slow cooker preheat your oven to 200C.

Place the chicken in a roasting tray without the oily stock from the slow cooker. Now brush with the remaining sauce and sprinkle over your 5 spice.

Roast for approximately 15-20 minutes until it looks barbecued and delicious!

We also made a quick stir fry of broccoli and baby corn with a little of the LKK sesame dressing to serve alongside.

Whenever we have a BBQ I insist on having Halloumi – it’s a fabulous accompaniment to the meats and is perfect when griddled or barbecued as it stands up to very high temperatures. I drizzled these with Lee Kum Kee Chilli Oil prior to griddling and it does create a lot of heat but as long as you can handle it then it’s absolutely incredible.

Spicy Chilli Halloumi

You will need:

1 pack of plain Halloumi
2-3 tsps of Lee Kum Kee Chilli Oil

Cut your Halloumi into thick slices. Place a griddle pan on and heat until smoking/or use a hot BBQ. Drizzle the halloumi ( not the pan ) with chilli oil and place carefully on the pan. Cook for a few minutes on each side. Watch carefully as you don’t want them to burn. You want them to be softening but browned beautifully on both sides for maximum flavour.

Serve with the BBQ Chinese chicken, rice and vegetables.
