Chocolate Coffee Fudge Cake – Fairtrade Fortnight

What is Fairtrade??

Millions of farmers and workers in developing countries who work hard every day to grow the food we eat still don’t earn enough to know where their next meal is coming from. In other words, they do not have food security. But we can all do something to tackle this injustice and support farmers and workers to put food on their families’ tables, by harnessing the power of Fairtrade.

When people are paid a fair price, they can have more control over their lives when times are hard, and worry less about how they will feed their families. Whether it’s the extra cash in their pockets or being able to expand their farms to grow more food to eat, Fairtrade means many farmers and workers are able to fulfil a basic human need – to put enough food on the table for the people they care about, all year round.

Think back to what you ate this morning..perhap you had a coffee and maybe it came from Kenya or a banana from Columbia or tea from India. How is it fair in the world we live in that people do not get a sufficient amount of money for the produce they work so hard to provide?

When I was asked to create a recipe for Fairtrade fortnight I knew it was something I could get on board with. I wanted to include as many of the best known Fairtrade products that I could, so this recipe includes coffee, cocoa, sugar, and bananas. Its not technically a breakfast food although you can totally justify eating this in the morning – coffee and bananas. Yes.

You may not have noticed but most of the main supermarkets stock at least a few fairtrade products, especially coffee!

We always buy fairtrade coffee, even though I don’t drink it Andrew does and his current favourite is the Kilimanjaro blend from CafeDirect which is always on our Sainsburys online grocery shop. It also works well in bakes as coffee really enhances the flavour of chocolate. This brand gives 50% of profits to the growers which means you can feel good about buying it and its of such a high quality too. The bananas we buy are also always fair-trade and luckily most of my favourite chocolate is fairtrade too including Green & Blacks, Cadburys Buttons ( I am a total sucker for buttons and always have been ) as well as Waitrose.

Chocolate Coffee Fudge Cake

You will need

For the cake:

150g of self raising flour
45g of fairtrade cocoa powder
175g softened butter
175g fairtrade caster sugar
1 level tsp baking powder
75ml strong cooled fairtrade black coffee
vanilla extract
3 large eggs

Coffee Fudge buttercream filling:

50g butter
30ml strong black coffee
30g soft brown sugar
35 g black treacle
200g icing sugar

1 large sliced banana

One Minute Fudge Frosting:

  • Recipe from CDKitchen 

1 cup granulated sugar
1/4 cup cocoa
1/4 cup butter
1/4 cup milk
1 teaspoon vanilla extract

Preheat your oven to 180c. Grease and line two cake tins.

Cream your butter and sugar together, then add your  flour, cocoa powder and baking powder. Finally add your beaten eggs, vanilla and coffee and beat until smooth. Split between your two tins and bake for 15-20 minutes until baked throughout, press lightly on the top and if it springs back its done. Leave to cool whilst making your buttercream:

Melt your butter, sugar, treacle and coffee in a saucepan then beat in your icing sugar. Leave to cool.

Spread onto one half of your cake, add banana slices around the edge and then sandwich together.

Finally make your fudge frosting, mix your ingredients (minus the vanilla) together in a pan and boil for one minute then add your vanilla. Now leave to cool for a minute or so then then using an electric mixer beat for 3 minutes. Now use it to cover the top of your cake, it needs to be added quickly as it sets quite firmly. You can leave plain or decorate with nuts or more chocolate!

Now invite some friends around to share it as it makes a good 8-10 generous servings and its so good you may just want to keep on munching..

If you want this to stay fresh for a few days you may want to omit the fresh banana or perhaps slice and add on top just prior to serving.

Love Food Hate Waste – Roast Chicken Lasagne

What do you do with meaty leftovers? If there is one thing I really hate to waste its meat. Not only does it have an effect on our shopping budget and although I am a fully fledged member of the meat eating club I do fully appreciate that there is a cost to what we eat and not just a financial one. Every week I cook a large chicken and we get a minimum of three meals from it. I start with a roast dinner for the family – two adults and two small children. At the same time I make up two small dinners for my little ones to have the following day – its really handy for when I’m working late and want my children to have a filling and healthy meal. It helps that roast dinners are the girls favourite meals. Then I will make a curry, pasta with chicken and sauce or similar. Finally myself and Andrew use the leftover cold chicken to make up sandwiches or salads for work.

How do I do it?

When the chicken is cooked I leave it to rest, the longer the meat stays on the bone the more moist it remains. I remove enough for our roast dinners and leave the rest of the chicken to cool fully. After our meal I get to work removing every piece of meat, nothing goes to waste and we love the thigh and leg meat too. Always remember to turn the chicken upside down after removing the breast, thigh and leg meat – there is a massive amount of moist meat underneath which I didn’t realise for quite a long time! The carcass doesn’t get left either – I use this to make up stock for soups and gravies.

This week I was asked by Love Food Hate Waste to create a recipe using leftover meat and I got to work at trying something new. I came up with THE most delicious chicken lasagne recipe. I am a lasagne lover anyway, in fact a little too much and so I don’t make it that often but when I do I love it. I make a big one so that we have leftovers as everyone knows its even better the next day when the flavours have begun to mingle. This is a very indulgent dish and you would never guess it was made with with leftovers. It’s also perfect for using up the last bits of veggies you have lurking in your fridge or the random lumps of cheese you never seem to finish.

Roast Chicken Lasagne

You will need:

For the meat sauce:

1/2 large roast chicken, shredded (I used a mixture of thigh and breast meat)
1 carrot (diced)
1 red/yellow pepper (diced)
1 courgette (sliced into rounds)
1/2 large red onion ( diced)
2 garlic cloves (diced finely)
600g chopped tomatoes
1 tbsp tomato puree ( I used double concentrate )
1 tbsp dried oregano

For the white sauce:

1 pint of warmed semi skimmed milk
4 tbsp of cornflour
75g mature cheddar
50g butter
1 tbsp of mustard
sea salt/black pepper

To layer:

8 pasta sheets ( that don’t require pre cooking)
100g mozzarella (shredded)
75g mature cheddar (grated)
2 large vine tomatoes (sliced thickly)
1 bunch of fresh basil
olive oil (to drizzle)
black pepper

Preheat your oven to 180c. Sauté your onions, garlic, carrots, and peppers until softened, add your chopped tomatoes, tomato puree, herbs and seasoning and cook for a simmer for 5 minutes. Add your chicken and warm though. While this is simmering start to make your white sauce. Melt your butter in a saucepan then add your flour and mix to form a paste (roux), add your warmed milk and whisk until smooth. Now add your mustard, seasoning and cheese. Mix until the cheese has melted and the sauce is smooth. Start to layer your lasagne with a layer of the chicken mixture followed by a layer of courgette, then add half of your pasta sheets and top with half of your white sauce and sprinkle with black pepper. Repeat and then top with your mozzarella, cheddar, tomatoes, basil leaves and black pepper. Drizzle with a little olive oil and bake for 30 minutes until bubbling and golden.

Serve with a large green salad.

Creme Egg Stuffed Chocolate Cookies

Its that time of year. Valentine’s Day has come and gone with all its heart shaped indulgence and now the shops are overtaken with eggs a plenty. I have seen so many fabulous creme egg themed creations this year and it of course inspired me to make my own. At the bottom of this post you will find a selection of bakes ( which are in my opinion are a lot more spectacular than mine ) which will make you run to the shops to buy a six pack of creme eggs!

I make cookies quite a lot, there is minimal prep and bake within about 10 minutes so perfect for when you just need a homemade treat but don’t want to put into a huge amount of effort.

I made these while testing out a new basic cookie recipe which I then adapt for lots of new twists and takes. I was sent a pack of Creme Eggs in a big box of goodies from Cadburys which arrived right in the middle of a baking burst – perfect timing yes? These cookies are more cakey/chewy in texture than crispy like a biscuit would be. They are also packed full of rich chocolate flavour and the creme egg gooeyness just completes them!

You will need:

115g butter
150g caster sugar
150g brown sugar
1 large egg
1 tsp vanilla paste
150g self raising flour
50g high quality cocoa powder
pinch of sea salt

3 Creme Eggs ( frozen for 20-30 mins )

Preheat your oven to 180. Grease and line a baking tray. Cream your butter and sugars together in a bowl, add your egg and vanilla paste and when mixed thoroughly add your dry ingredients until combined. The batter will be fairly sticky. Remove your eggs from the freezer and using a sharp knife dipped in boiling water cut your eggs into 4 slices. Place a tsp of batter onto the tray and place a slice of egg in the middle and top with another spoonful of batter, leave space in between the cookies as they will spread. Bake for about 10-12 minutes. Remove from oven and either leave to cool or immediately top with another slice of creme egg which will melt and make the cookies look indulgent!

Five Cookbooks I’m Loving Right Now

I’m a cookbook addict, if you are a regular reader you will know I have hoards of new and old books stacked high all over my house. I have books that are falling apart which I have found in charity shop hunts or at car boot sales. Brand new books from celebrity chefs which I often get for birthday and christmas presents and most recently a book written by a fellow food blogger. To me a cookbook isn’t just something for me to follow to create a dish, I devour it like a novel and I am inspired by it to try new things and to be adventurous with the dishes I make. These are the books I am really enjoying at the moment:

Hungry Healthy Happy – Danni Martin:

Danni Martin is a food blogger who creates recipes which are healthy and delicious. Hungry Healthy Happy is a truly balanced cookbook which explains that you can still enjoy all the foods you love whilst maintaining a healthy and nutritious diet. There are recipes for every occasion and time of day. I love the lunch ideas as well as the dairy free chocolate mousse and I tried the Chocolate Nut Ball truffles today and ohhh they are to die for. I can’t recommend this book enough for anyone wanting to make changes to their lifestyle or people who just want fantastic food which is wholesome too. Now guess what… I am giving a copy away on the blog next week so keep an eye out as well as a full review.

Mastering The Art Of French Cooking – Julia Child, Simone Beck and Louisette Bertholle:

I fell in love with this book quite a few years ago but I have recently rediscovered it. I am a big Julia Child fan and the Beef Bourguignon in the book is one of the best dishes I have ever made. It’s not that widely available to buy anymore and I had really old versions of the two thick volumes bought for me from my very lovely other half which were hunted down on eBay.

Coast – Rachel Allen:

I have most of Rachel Allen’s books and I love the way she cooks, having met her on a few occasions and knowing how lovely and down to earth she is it makes her books that little bit more special. Coast is a real celebration of her love of Ireland and she travelled the coast meeting food producers and trying local dishes before using the influences and inspiration from her trip to create utterly divine recipes. I love the bacon and parsley dish as well as the bread, wine and cheese gratin. Its also full of stories and gorgeous photos. This would make a lovely gift.

Jamie’s America – Jamie Oliver:

Its rare that a Jamie Oliver book is far from my reading pile. I think I have all his books and I have also subscribed to his magazine for the past four years. I just love his recipes and his America book is what I am enjoying right now. My favourite recipes are the Bourbon Pecan Tart and Candied Bacon Green Salad but there are so many to choose from..

River Cottage Everyday – Hugh Fearnley Whittinghall:

This book is a kitchen staple. I make the flatbreads about once a month. As the name suggests its packed full of recipes you can use everyday. The drop scones are also pretty good and use wholemeal flour so they are more nutritious than normal. I think I am enjoying it even more since my trip to River Cottage!

Food Blogger Of The Fortnight – Penelope’s Pantry

Today we are getting to know the blogger behind Penelope’s Pantry Penelope has been blogging for nearly 10 years! Wowzer. Her blog is primarily about food but also her family,girl guiding and disabilities. It makes for an interesting read so definitely go check it out. I especially like her free from recipes as I also have a little one who has allergies. Her Sweet Potato biscuits look really good and are dairy, egg, soya and sugar free so great for weaning or just for anyone who needs to avoid those ingredients. I am a fairly new visitor to her pantry but I don’t want to leave it anytime soon.

Over to Penelope..

I started blogging way back in 2007(!) I belonged to the Food & Drink discussion boards on Handbag.com and was baking a lot – mainly cupcakes back then for friends and family who were asking for my recipes. Initially it was just that, an online recipe log, the equivalent of those scraps of paper my Mum and Grandma have tucked in their cookbooks with the recipe for the Coronation chicken that they ate for lunch back in 1990. Who am I kidding? I still have those – and that recipe for Coronation chicken! Over the next 2-3 years I blogged fairly sporadically – using showtunes as my post title and linking in my love for Musical Theatre with that for food. Guiding and disability also features – I run a Brownie and Guide unit and will often post food related activity plans for non oven based cooking, and celebration/ festival/ seasonal food activities for little ones. More recently, with a home, marriage, and the arrival of little Harry my focus has obviously changed. I definitely write what I live and the blog is now heavily peppered with dairy, egg, soya and strawberry free weaning recipes for my little one who has severe allergies. I still love to bake, but my focus is currently on eating really healthily, reducing refined sugar as well as inclusive cooking and baking. I’ve also started including some of my crafting on the blog – earlier this year I made my first quilt and more recently I’ve taught myself to crochet.

What is your most popular recipe?

My most popular recipe is the Mars Bar cake I made for my husband’s birthday in 2013. It had been a difficult year for us, I’d been unwell since the start of the year, and we were 4 months into a house purchase that was stuck in probate. I make Mark a birthday cake every year, but this year wanted to make something he’d adore as he’d been such a huge support to me. It’s a lovely straightforward recipe, but it’s the icing that makes it something people really enjoy. I still get emails from people who want to scale it up as it’s hugely popular for bake sales and Bake off competitions! I must remake it actually, but obviously it’s not dairy free with all those Mars Bars inside!

And your personal favourite?

My favourite recipe – that’s a hard one, I love all my preserves. Especially now as it’s not something I get the time to do with a toddler running around. It changes regularly but I think at the moment it’s my Chewy apple and sultana flapjacks oats are lactogenic, and Harry’s been poorly since mid August so we’re nursing more than we have been for a while. Flapjacks can be eaten with one hand too which is always a bonus! That said, on a savoury note I made my Super slow cooked brisket at the weekend and had forgotten just how much I adore that. 3 hours to perfect comfort food – and it stretches a £5 piece of brisket to 4 days worth of dinners for 2 and a half people.

India In A Cup

Two of my closest friends are on a rather wonderful travel adventure at the moment, which means we don’t get to see them for a whole year! As much as we miss them its been amazing to see the photos from their trip and to chat about all they are seeing and doing – the wonders of technology hey?

I asked him and his partner Andora if they would share a snippet of their travels with us and here they are chatting about one of my very favourite drinks: Chai.

One day I will experience it first hand in India!

Ceri and I have spent 5 months travelling around India and Southeast Asia; Thailand, Laos, Cambodia, Malaysia and Indonesia. Living out of guesthouses, homestays and hostels and not preparing any of our own meals has meant we’ve had plenty of chances to try the local cuisine; we’ve loved some things (fresh fish tikka from Goa, nasi goreng from Indonesia) and loathed others (seafood porridge from Thailand, deep fried scorpion on a stick from Laos) but if we had to choose one favourite it would be a nice, hot, sugary cup of masala chai in India.

India is a world within a country; a place where you can find deserts and oceans, sprawling cities and rice paddies, backwaters and mountain top towns. The diversity of the land, food, culture and people makes it a chaotic and mesmerising place to spend a few months. One thing we found we could depend on amongst the chaos, whichever part of India we visited, was chai. It’s everywhere, it runs through the veins of the country and you only need to take a few steps along any street to find one of the many, many vendors.

During our two month stay in India enjoying a cup of chai (or several) became a daily habit; who can blame us at a cost of between 6 and 10 pence a cup?! The best chai we tasted came from the most unlikely sources; with tuk tuk drivers in roadside shacks built from scrap metal, in paper cups bought through the iron bars of the train window from the chai wallah on the platform, a freebie cup at sunrise when the marketplace of a crumbling city starts coming to life, mixed over a campfire in the desert or with the hotel boss on the rooftop of our guest house in total darkness during a power cut – a ‘chai party’.

The masala mix varied slightly between different vendors but usually included cinnamon, ginger and cardamom. Sometimes we could also pick out hints of nutmeg and cloves. Although the masala mix varied, the technique for making the tea was almost always the same. The milk would be permanently simmering in a metal pot which had an impressive layer of burnt crust at the bottom. This, teamed with loose leaf tea, a homemade masala spice mix and a measure of sugar that made us wince, made the perfect little pick me up drink. In most cases, the spice mix and loose leaf tea were strained out before drinking but we also drank a few cups trying to avoid a thick layer of sediment at the bottom.

Since leaving India we’ve tried to find a cup of chai that matches up but so far we’ve not been able to find any that compare. Our next stop is New Zealand which means a slim chance of chai – looks like we’ll have to start hunting for a new favourite!

An Evening With Hotter Shoes & Taking Shape

Last Autumn I spent some really lovely mother/daughter time in Cardiff attending a joint event hosted by Hotter and Taking Shape. I had previously tried Hotter products and attended one of their events so I knew I would be in for a good evening trying on some quality shoes. Taking Shape was a new brand to me, it caters for women of size 14+ and so my mum was spoiled with a new outfit and I walked away with an incredibly good pair of boots!

We started off at Taking Shape with a lovely buffet, prosecco and the friendliest store staff. My mum was treated like a queen and one of the assistants chose the perfect clothes for her, an outfit which she wouldn’t have picked yet flattered her shape in the best way. She was surprised and pleased to learn that she could fit easily into a smaller size than she was used to and at the quality of the clothes. We learnt that this is a normal ( free ) service at the store, staff are more than happy to help you choose the perfect outfits and give you honest tips on what works and what doesn’t. You can even ask for the store to open later for large bookings, would be a fun alternative girls night out with a personal service and refreshments. I was a little disappointed that they didn’t offer a smaller range of sizes as I loved the clothes – it was definitely not the mumsy style of clothing that I’ve noticed in other plus size stores.

My mum chose a well fitted pair of trousers and a stylish top with zip detail at the back – it was not what she would have chosen but it looked amazing on her.

They have new lines in now and we are taking a trip to Cardiff soon to take a look, I think this disclosure tunic would be perfect for my mum:

Outfit done it was time to move onto the Hotter store.

I always have a good time at Hotter shoes. Their staff are wonderful and their shoes are comfy and stylish – a far cry from the old fashioned styles I had once expected. My mum has been a fan of their shoes for a really long time, she swears by their ankle boots and was really pleased with the shoes she chose – in fact she wore them on an upcoming trip to Paris where she knew there would be a lot of walking involved and she said it was like walking on a cushion. The generous Hotter staff let my mum choose a pair too so she had an outfit with a new pair of boots – she was pretty happy on the way home!

I needed a smart pair of knee high black boots and the assistant helped me find the perfect pair – these Briony boots not only look incredible but fit well – with a stretchy fit for those with larger calves.

I have worn them so much this winter, with dresses, jeans and over leggings and they seem to instantly make my outfit look more polished. In fact they still look as though they have barely been worn.

Hotter now have their Spring and Summer styles in store. I am a bit in love with the Raquel shoes, I think they would be great with summer dresses.

Or the Tara shoes which would be lovely with skinny jeans!

Jamie Oliver Protein Pancakes

I have had a subscription to the Jamie Oliver magazine for a little over 4 years now. This alone should tell you that I am a bit of a fan of it. I look forward to it dropping through my letterbox and every month I drool over the recipes and lose myself in pages of food. I occasionally make dishes from it but like most things its something I plan to do and often just don’t get around to it. In this months magazine was a recipe for Protein Pancakes and they looked great, low fat and healthy so I jumped straight in and tried them.

Ah they are so good! I’m loving alternative pancakes right now, you can find my sweet potato version here. These taste a lot like normal pancakes and the texture is great plus you can feel good about yourself knowing they aren’t too indulgent. They were a kind of cross between pikelets/drop scones and American style pancakes. I used fat free cottage cheese as thats what I had but any type is fine. On my second attempt I made some very slight adaptations with the introduction of cinnamon, vanilla ( takes it up a notch to make it a bit special ) and I used cows milk rather than almond. I also used coconut oil to oil my pan as I like the flavour.

Protein pancakes

In the magazine they were served with almond butter, yoghurt, fruit and pomegranate seeds but we kept it simple with some diced banana and a drizzle of honey. I can see us making these again and again.

Here is the recipe, as featured in Jamie Oliver magazine and ever so slightly adapted:

Protein Pancakes

You will need:

100g oats
100g cottage cheese
2 eggs
1 banana – fairly ripe is best I think
pinch of baking powder
1/2 tsp cinnamon (optional)
1/2 tsp Vanilla bean paste (optional)
Splash of milk ( almond is specified in the recipe however I used cows milk )
Oil for frying ( I used coconut oil, the recipe suggested groundnut )

The method couldn’t be simpler. Blitz all of your ingredients (minus the oil) in a blender adding a splash more milk if you feel the batter is too thick. Place a large pan over a medium heat and add your oil, if you have a good pan you barely need any. Dollop your batter in large spoonfuls onto your pan and cook on one side until the top starts to bubble before flipping and cooking the other side.

It takes just a few minutes and they are beautiful when served warm although according to our 4yr old they are fabulous when cold too. Add toppings/syrups of your choice – I ate one just after cooking without anything added and it tasted perfectly good naked.
