Its that time of year. Valentine’s Day has come and gone with all its heart shaped indulgence and now the shops are overtaken with eggs a plenty. I have seen so many fabulous creme egg themed creations this year and it of course inspired me to make my own. At the bottom of this post you will find a selection of bakes ( which are in my opinion are a lot more spectacular than mine ) which will make you run to the shops to buy a six pack of creme eggs!
I make cookies quite a lot, there is minimal prep and bake within about 10 minutes so perfect for when you just need a homemade treat but don’t want to put into a huge amount of effort.
I made these while testing out a new basic cookie recipe which I then adapt for lots of new twists and takes. I was sent a pack of Creme Eggs in a big box of goodies from Cadburys which arrived right in the middle of a baking burst – perfect timing yes? These cookies are more cakey/chewy in texture than crispy like a biscuit would be. They are also packed full of rich chocolate flavour and the creme egg gooeyness just completes them!
You will need:
115g butter
150g caster sugar
150g brown sugar
1 large egg
1 tsp vanilla paste
150g self raising flour
50g high quality cocoa powder
pinch of sea salt
3 Creme Eggs ( frozen for 20-30 mins )
Preheat your oven to 180. Grease and line a baking tray. Cream your butter and sugars together in a bowl, add your egg and vanilla paste and when mixed thoroughly add your dry ingredients until combined. The batter will be fairly sticky. Remove your eggs from the freezer and using a sharp knife dipped in boiling water cut your eggs into 4 slices. Place a tsp of batter onto the tray and place a slice of egg in the middle and top with another spoonful of batter, leave space in between the cookies as they will spread. Bake for about 10-12 minutes. Remove from oven and either leave to cool or immediately top with another slice of creme egg which will melt and make the cookies look indulgent!
