Becoming A Coffee Addict

Can I tell you something? Something I am really proud of? No it’s not a work achievement..or my children ( although clearly I am proud of them too..most of the time ) I am proud because I finally FINALLY learned to enjoy coffee.

I am completely aware of how ridiculous this sounds. But I have wanted to love coffee for such a long time. I tried so many times to train my brain and taste buds to enjoy it and I just couldn’t. And I have done it and oops I am a coffee addict. Already.

The first time I remember really wanting to like coffee was on a trip to Italy in 2008. Everyone drank coffee, looking effortlessly cool with their tiny cups of espresso. Wafts of the most delicious aromas were everywhere..and I was drinking hot chocolate because we all know that tea anywhere other than the UK just isn’t right. It was the best hot chocolate I have had in my life but still I wanted it to be coffee. I tried it and couldn’t get past the first gulp. In the 8 years since I have tried again and again, I could just about stomach an iced coffee but really they are more like a dessert aren’t they?

In July I asked a local artisan coffee company to make me an introduction to coffee coffee. I sound so weird.  They made me a flat white with a half shot and I added a liberal amount of demerara sugar and I kind of liked it. Just. The next 5 days I made myself drink it every day, I wasn’t in love with it but I could drink it.

Fast forward two months and I have become one of those people. You know the ones. I cannot function in the morning without it, I talk about it. I try different variations.. I share photos of it online ..in a word I am obsessed.

I am also a little bit of a coffee snob. I can’t drink instant. I make my own at home using freshly ground beans or use pods for my machine.

It just goes to show that you can make yourself like most foods. Five years ago I wouldn’t have eaten 80% dark chocolate or enjoyed olives and chillies. Yet now I really love them. Maybe your taste buds mature or you can just become more experimental.

I must admit I do still a good cup of tea but it is possible that coffee is edging forward as my favourite.

Also are you aware that there are health benefits of drinking coffee? This makes me feel better about it.

According to Mens Health people who drink 3- 5 cups of coffee a day have a 65% less chance of developing Alzheimers or Dementia – if you have seen anyone suffer from this it is incredibly painful. That alone is reason enough for me.

Yet there is more. Drink 1-2 cups of coffee and reduce the risk of cardiovascular disease by 38%.

It can also help with pain reduction, weight loss and reduces the risk of type 2 diabetes.

Sweet Potato, Bacon & Leek Dauphinoise

I love Dauphinoise, you may remember my Cheesy Pesto Dauphinoise from earlier this year which has become one of the most popular recipes on the blog. This time I made it with a twist and used sweet potatoes instead of regular potatoes. I added leeks and bacon for extra flavour and wowzer it is one of the nicest dishes I have made in ages.

Sweet Potato, Bacon & Leek Dauphinoise

You will need:

600g peeled sweet potatoes, sliced into 2cm rounds

3 rashers of smoked bacon, cooked and diced

2 small leeks, diced finely and sautéed until golden

400ml double cream

semi skimmed milk

75g grated cheddar cheese

salt and pepper

Preheat your oven to 200c. Place the sweet potato rounds into a pan of boiling water and simmer for 5 minutes. Now drain and place back in the pan, along with your cream and milk and season with salt and pepper, bring to the boil and simmer for a few minutes. Now stir through your bacon and leeks and pour ( carefully ) into an ovenproof dish. Try to ensure an even distribution of the sweet potatoes. Bake for 20 minutes until golden brown, remove from oven and sprinkle over your cheese. Return to the oven for 5 – 10 minutes until the cheese is bubbling and golden.

This is such an indulgent dish that it could be easily served alone with a large green salad.

Food Thoughts & Quotes – Oscar Wilde

I have been reading The Picture Of Dorian Gray this week, a book not even remotely related to food but it led me on to some reading about Oscar Wilde, interesting to say the least. It seems he was quite a remarkable character.  A lot of what is written about him talks about his love of food and the dinner table, he also references food a lot in his works. Isn’t it funny how everything seems to lead back to food? Any kind of book or film or show tends to include it at some point and it will often lead me to a point of having ideas for new recipes or just food cravings. In the case of Oscar Wilde it has made me want a simple Cucumber sandwiches. He refers to them several times in The Importance Of Being Earnest and it reminded me of how they were my very favourite sandwiches when I was a child and would always ask for them when I had school trips or if we had days to the beach which always seemed to include a lovely mouthful of gritty sand. I haven’t had one in ages so thats my afternoon snack planned.

I am sure there is a little bit of this in all of us. I know that I alternate between wanting to indulge and losing my appetite completely when I am having a bad day but for the most part I want to eat food that soothes me. Comforting stews, fresh bread with salted butter and to drink I like a thick hot chocolate. Food really does heal the soul at times.

How many times have you had a really, really bad day? Then had a meal that was so good that you just forgot about it. Even if only for half an hour. Food can solve all manners of problems. When I was younger I would often make cakes or take mugs of tea or coffee to my parents when I had misbehaved or pushed the boundaries a little too much. If I know a family member or friend is having a tough time I know that a coffee and a cake is sometimes the only way to get them to talk it out. The same goes for me.. I can totally be won over by a really good box of chocolates or a cheese platter. The way to EVERYONES heart is through their stomach.. not just men.

Stovetop Pizza

I first saw stovetop or skillet pizza on Pinterest a few years ago, it intrigued me as I had never considered cooking pizza that way. I didn’t think it would work, I imagined it would be uncooked inside or the bottom wouldn’t be as crispy as I liked – I am happy to admit I was wrong.

You can make this using homemade dough which I do quite often or as an easy option you can use a store-bought plain pizza base. I used red pesto in this case which added an extra flavour dimension but tomato paste or puree works just fine. Go to town with your toppings, experiment a little. If you fancy a sweet pizza I can highly recommend nutella with chopped banana and mini marshmallows.

Stovetop Pizza

You will need:

1 ready made pizza base
2 tbsp of red pesto or tomato puree
150g grated mature cheddar
selection of toppings:

recommended toppings:

1 handful of olives sliced in half
3 slices of ham, diced
1 handful of cherry or plum tomatoes sliced in half
1/4 red onion thinly sliced
drizzle of oil

Heat a large frying pan or skillet until hot.
Brown both sides of your pizza base in your pan, spread on your pesto or puree and your toppings, finishing with your cheese.

Brown under a hot grill until bronzed and your cheese is bubbling. Remove from pan and finish with a little drizzle of flavoured oil – I love chilli oil.

Hilton London Metropole Review

Earlier this month I took a really fun trip to London with my youngest and eldest sister. I think it may be the first time we have ever taken a trip together, just the three of us. If you read this blog regularly you will know I have quite a large family including four sisters, I am trapped right in the middle of them all. We had planned a visit to Friends Fest, a festival based around the famous sitcom – it sounds random but I assure you it was really cool. We got to visit Monica’s apartment and have a photo using the props from the opening credits of the show..and don’t get me started on hearing Smelly Cat being sung in Central Perk whilst I was pretending to make a coffee from behind the counter. SO much fun.

Of course when you are three Welsh women off for a visit to a big city you don’t just call in there for a few hours! You make a weekend of it. We stayed at The Hilton London Metropole (HLM)  on Edgware Road – a perfect central location. I am fairly loyal to the Hilton brand and use the hotels quite often when booking last minute city breaks, I get a discount through my day job and I find there is a consistently high standard with the rooms and service.

For this stay at the Hilton London Metropole, we were invited to review one of their large family rooms – perfect for girly breaks or indeed a family with small children. We were also asked to try out their afternoon tea..how could we refuse?

The HLM is an impressive hotel, it has a number of entrances ..not designed to confuse I am sure and it is so much bigger when you step inside than you imagine it to be. Considering the hotel was very busy, service at check in was quick and painless and we were soon in our beautiful room with huge sweeping windows overlooking the busy London streets. Crisp bedding, an abundance of Peter Roth toiletries and not a piece of lego or a crayon in site. BLISS. The family room contains two queen sized beds along with a sofa which turns into a double bed. Two large TV’s, desk, tea and coffee making facilities as well as a mini bar make up the remainder of the room. The bathroom was large and YAY it included an actual bath, so many hotel rooms don’t have baths anymore. I am a real bath girl.

After some relaxation time we headed down to find the EDG lounge and bar for our afternoon tea. On arrival we were given the option of the standard afternoon tea or a cocktail afternoon tea, I do imagine you can guess what we chose. I opted for a Mint Daiquiri ( similar in taste to a Mojito ) to accompany my tea. The staff were friendly and courteous and there was a really chilled atmosphere in the lounge. The decor was very cool with lots to catch your eye.

When our tea arrived I could not believe how much there was to choose from..just take a look:

We finished off with a second round of cocktails..I am sure the second batch was a lot stronger! This was a cherry brandy and tequila cocktail.. delicious but wowzer it took my breath away a little.

As part of our stay we were given access to the Executive Lounge which is located on the second floor of the hotel. If you stay in an executive room then you can use the lounge throughout your stay. You get free refreshments throughout the day, newspapers, computers to use and its a nice place just to relax. I used the lounge to make some calls in peace with a latte and following on from our afternoon tea we headed up for some drinks. Between 6-8pm you can help yourself to liqueurs, wines and beers as well as soft drinks. There are also light snacks and the all important cheese board.  We had one more drink and a really good chat about anything and everything, myself and my younger sister also introduced my eldest sister to Instagram and she spent more time than is necessary looking at the David Beckham’s Instagram account.

Back in our room we watched TV before taking it in turns to have long relaxing baths, the bed was one of the comfiest in any hotel I have stayed in and I felt so chilled out.

Breakfast in a hotel can be such a letdown, especially when the hotel is as large and busy as the Hilton London Metropole. I have never been disappointed at a Hilton. There is a huge variety of pastries, meats and cheeses as well as cereals, fruits and yoghurts. That is before you even start on the waffles, made to order omelettes and full cooked English breakfasts. Teas and coffees are served at your table.

Checkout isn’t until 11am which is always a big plus, there is nothing worse than having a nice break in a hotel then rushing to be out by 10am. Checkout is simple and the hotel held onto our bags for the day so we could travel without lugging them around London.

As my sisters were so impressed with our stay I asked them to say a few words about what they thought, especially important for anyone with dietary requirements is my younger sister Hannahs opinion on how they dealt with her gluten intolerance:

“Our stay at the Hilton was lovely and relaxing and the location was perfect for visiting my favourite London attractions. As I am gluten free, it was particularly nice not having to worry about food whilst I was there, I have gotten used to packing additional snacks in case of emergencies but the GF options at the Hilton were fantastic so these definitely weren’t required. We advised the hotel the day before our visit of my intolerance and they were very thoughtful and accommodating. Afternoon tea was beautiful, with an amazing variety of cakes and other sweet treats. Lots of care and attention had been made to make the GF option just as appealing as the others. The staff were also extremely helpful at breakfast, advising on what I could and couldn’t eat. In most restaurants breakfast options are limited to fruit or cooked breakfast, however I was provided with GF toast, blueberry muffins and biscuits which was a lovely treat. Staff throughout our stay were very friendly and helpful which made our trip to London much more enjoyable. It was the perfect weekend and I can’t wait to visit the city and the hotel again soon!”

My eldest sister Allison also shares her take on the hotel:

“The hotel far exceeded my expectations. The location was perfect, our room gave a bird’s eye view of the city but still felt like a peaceful haven away from the hustle and bustle that comes with visiting one of the major capitals of the world. The queen sized beds were almost too comfy to leave but there was so much else to experience here. The food, well, what can I say? Afternoon tea with cocktails – doesn’t get much better. We were truly spoilt – a welcome mix of tradition and new favourites. Scones with jam and cream to whet the palate, very closely followed by a cream tart with the most delicious amaretto biscuit I have ever tasted. The sandwiches went down well too – the smoked salmon was my favourite. I would certainly recommend the Gin cocktail but the mint daiquiri was also dangerously good for an afternoon tipple. Where next? Grudgingly leaving too many cakes each ( they did pack them in a box for us to enjoy later ) we decided to chill out in the Executive lounge – the corridor alone will give you some insight into the pleasures to come. We just couldn’t resist a selfie in the mirrored ceiling. As we had already indulged ourselves to excess we thought we would just enjoy something small and sparkling. However, we quickly discovered we had a little room  and managed some cheese and crudités. It is amazing how a short lift ride can increase your appetite!! Throughout our stay the staff were attentive without being obtrusive. Nothing was too much trouble and for myself as a mum used to doing everything for everyone in our lives it was a very welcome change. My only regret was there was so much we didn’t get to do – such as the pool and leisure facilities, sit in the sports bar, have dinner in the restaurants or relax at the piano bar. I look forward to these for my next visit.”

We can highly recommend a stay at The Hilton London Metropole for any type of break in London be it for business, pleasure or romance. We actually could not fault it.

Food Thoughts & Quotes – Tolkien

Food is everywhere. Let’s be honest.. you have thought about it in the last half hour haven’t you? I mean you are thinking about it right this minute.. a dense slice of chocolate cake, buttery toast..the juiciest orange. I’ll stop now.

This is the second in my series of posts about food thoughts and quotes and this week it is all about Tolkien. Many people loved the Lord Of The Rings and Hobbit books as well as the films and there are so many fabulous quotes and poems from them. These food related bits fitted well into the theme of my series:

“If more of us valued food and cheer above hoarded gold, it would be a much merrier world”

I love this. To be honest.. I do already value food and cheer about hoarded gold. Don’t get me wrong I would like to have a little more money but who wouldn’t? It is nice to feel financially secure and comfortable but being rich is not my goal in life. Being happy is and food makes me incredibly happy. Creating something from scratch using the best but often simplest and cheapest  of ingredients, then feeding it to friends and family and seeing the look of pleasure on their faces is truly wonderful. Food makes people happy. It is something that we all need and that most of us take great delight in, whether that be by cooking it or just eating it. Tolkien is so right when he says it would be a much merrier world if we valued food and cheer over riches.

“Is it nice my precious? Is it juicy? Is it scrumptiously crunchable?”

This line from Gollum in the film makes me think of perfectly ripe apples..although I am pretty sure that is not what he was thinking about. Crunchy, juicy apples. Isn’t it weird what words can conjure up in your mind?

“What about elevenses? Luncheon? Afternoon tea? Dinner? Supper? He knows about them doesn’t he?”

This line is from the Fellowship Of The Ring when Pippin questions if Aragon knows about second breakfasts.

I could definitely live in a world with second breakfasts and elevenses and afternoon tea every single day. Maybe I should have been a hobbit? I could certainly go for living in a cosy little hobbit hole sometimes. My books..some good food and a cup of tea? Bliss.

In the films there are lots of dishes mentioned that you may not have typically heard of or tried – I know I certainly hadn’t..until now that is. Lembas Bread, which in the film is said to be able to fill a man for a whole day with just one bite was the first on my list to try and it is so easy to make and so much fun to recreate something from the film. I was not however able to find mallorn leaves to wrap them up but you know what.. a food storage tub works just fine. I guess the Hobbits would have used them had they had the chance. They are very similar to scones and taste good with butter and jam.

I based my Lembas Bread on this recipe here although I made a lot of adaptations and I am not 100% happy yet so watch this space for my recipe. See my attempt below:

Genius Gluten Free Goodies

When I was asked to try out some of the Genius gluten free products, I immediately said yes. Genius is a brand we know and use regularly. Chloe really likes their crumpets and pancakes as well as the cakes that they produce and they are one of the only brands easily accessible to us which offer a wide range of gluten, dairy and soya free products.

We were sent a selection of baked products including Blueberry muffins, crumpets, fruit loaf and pancakes. Chloe thought it was her birthday.

The muffins are delicious and packed full of fresh blueberries – I shared one with Chloe and I was really impressed with the texture and flavour. The texture is nearly always what disappoints me when it comes to gluten free cakes, I think the blueberries really help as they make it moist and similar to a normal muffin. These are in handy packs of two and perfect for picnics.

The crumpets we know and love already, in fact we all enjoy these rather than just saving them for Chloe as we do with lots of other free from goods. They have a good shelf life on them which is good if you are the only gluten free person in your household.

The pancakes are probably the most frequent Genius purchase I make, they are transportable and not too messy so make a good snack/treat when we attend playgroups or pop to the park. I also use them for Chloe on weekends if I make normal pancakes for the rest of the family. She likes hers with fruit and a little honey or Sweet Freedom Choc Shot syrup  – weekends are for indulgent treats after all.

Below I have created a simple yet satisfying breakfast serving suggestion for the pancakes with griddled peaches drizzled with honey. Chloe adored this for breakfast yesterday – she definitely felt she was being spoiled.

Easy Plum & Vanilla Jam

My parents have a large plum tree which overhangs into their garden from their neighbours. This year there have been masses of plums and as their neighbours don’t want them I have delighted in taking them off their hands. I tried this plum and vanilla jam out as a small batch initially as I wasn’t sure how it would turn out, how it would set and if it would taste good. Then obviously I regretted it as it was soooo good.

I am off to collect more today to make jars for family and friends.

This is the simplest recipe, it doesn’t use jam sugar or pectin but instead uses granulated sugar and lemon juice. I also added vanilla which adds another flavour dimension.

Easy Plum & Vanilla Jam

You wil need:

350g chopped plums

200g granulated sugar

1.5 tbsp of lemon juice

1 tsp vanilla paste or extract

Combine all of your ingredients in a saucepan, mix well and simmer over a medium heat. Stir until the sugar dissolves then leave to bubble and thicken. You can test if its ready by placing a spoonful on a chilled plate and playing in the freezer for a minute or two and check the consistency then. If it isn’t thick enough continue on a medium heat until you are happy with the texture.

Food Thoughts & Quotes – Julia Child

This is the start in a new series of short posts all about my thoughts about food and quotes relating to that. I was inspired to start this after a fellow blogger and friend Kavita began a series of posts based on travel quotes and memories, you can check them out here. I love quotes, I am a little obsessed by them and there are so many great quotes about food and the love of it that I thought this would be a really nice way to share them with you.

I often find myself getting lost in a cookbook, sat gazing for hours at the ingredients, back stories and photos. My favourite books are the ones which have personal stories or experiences linked in to the recipes.  I watch films and documentaries about food quite often and it is definitely my favourite thing to talk about. A lot of my favourite quotes come from my food idols such as Julia Child. I love her cookbooks but also her book My Life In France which if you read it, will surely make you want to spend at least a year living there and eating all of the food.

With Julia in mind I will share with you some of my favourite quotes of hers and why I love them:

“Find something you’re passionate about and keep tremendously interested in it.”

I read this a little while ago when I was finding the volume of work I was doing a little much. My part time office job which I really do not enjoy enables me to be able to spend a considerable amount of time working on what I do love – this blog. I am passionate about food and writing and therefore when it gets a bit much I sit back and I think, do I still love this? Do I still want to do it. The answer is always yes. Reading other blogs, cookbooks and watching programmes about food continues to spark my interest and increase my knowledge.

“Well, all I know is this—nothing you ever learn is really wasted, and will sometime be used.”

When you think you know how to cook it is easy to become lazy, cook the same dishes and to stop taking on new challenges which is why I find continuing to read and push myself to learn more is so important. I am planning to start a French cuisine course in the New Year and I am continuing to work through and absorb Mastering The Art Of French Cooking ( Julia Child & Simone Beck ).

I don’t always feel I have taken in anything new from a book or blog but then months later I will be cooking and a problem will present itself and I will realise I know how to fix it based on that knowledge. Try to read something new every week, even if it’s just a magazine or a few articles from a website.

“With enough butter, anything is good.” and “If you are afraid of butter, use cream”

This quote I love simply because it is true. There is a part in the film Julie and Julia ( based on the life of Julia Child and a blogger named Julie who challenged herself to cook all of Julia’s recipes in one year ) which says something along the lines of, think of every good thing you like to eat and it will taste of butter. I am not sure EVERY single thing I like tastes of butter but a most of it does. Whenever I used to diet or try to cut calories I would omit butter and sure enough the food tasted a lot blander. There are other ways to increase flavour without fat but I would rather use a little less butter than cut it completely. These last few months when I have not really cut out foods but rather cut down I have been far more successful in reaching my weight loss goals.

Lemon And Lime Drizzle Cake

Today I have a really quick and easy recipe for you, a zesty and moist traybake. I love any cake which involves mixing all of the ingredients together in one go, they always appeal to my lazy side. This should take no more than 5-10 minutes of prep and then you can put your feet up with a cup of tea whilst you wait for your cake to bake.

Two weeks ago I decided to bake a lemon drizzle cake, a recipe I have made and changed numerous times over the years. On this occasion I decided to make a lemon and lime version, the reason for that being simply that I only had one lemon but a number of limes. That same night when my cake was cooling on the cake rack, I watched The Great British Bake Off and they were making drizzle cakes as the first challenge.. even stranger one of the contestants made a lemon and lime drizzle cake. Spooky hey?

Lemon & Lime Drizzle Cake

You will need:

Base:

200g softened butter
200g golden caster sugar
250g self raising flour
1.5tsp baking powder
4 eggs
60ml semi skimmed milk
zest of 1 lemon and 1 lime

Topping:

200g granulates sugar
juice of 1 lemon and 1 lime

Preheat oven to gas mark 180c. Line/grease a tray bake tray. Blend all of your base ingredients together until smooth, it is easiest to use a blender but I will often beat with a wooden spoon as I find it therapeutic. Pour into your tray and bake for 30-35 minutes until cooked through and the sponge bounces back slightly. Leave to cool slightly but not completely – it needs to be warm to absorb the drizzle.

For the drizzle topping mix your lemon juice and sugar together and pour over your warm cake. Leave to cool until the cake has a crunchy topping. Cut into squares and serve.

  • These foil trays that you can pick up really cheaply in the supermarkets are great for traybake, the perfect size and also great if you want to transport them to an event or into work for your colleagues.
