Stovetop Pizza

I first saw stovetop or skillet pizza on Pinterest a few years ago, it intrigued me as I had never considered cooking pizza that way. I didn’t think it would work, I imagined it would be uncooked inside or the bottom wouldn’t be as crispy as I liked – I am happy to admit I was wrong.

You can make this using homemade dough which I do quite often or as an easy option you can use a store-bought plain pizza base. I used red pesto in this case which added an extra flavour dimension but tomato paste or puree works just fine. Go to town with your toppings, experiment a little. If you fancy a sweet pizza I can highly recommend nutella with chopped banana and mini marshmallows.

Stovetop Pizza

You will need:

1 ready made pizza base
2 tbsp of red pesto or tomato puree
150g grated mature cheddar
selection of toppings:

recommended toppings:

1 handful of olives sliced in half
3 slices of ham, diced
1 handful of cherry or plum tomatoes sliced in half
1/4 red onion thinly sliced
drizzle of oil

Heat a large frying pan or skillet until hot.
Brown both sides of your pizza base in your pan, spread on your pesto or puree and your toppings, finishing with your cheese.

Brown under a hot grill until bronzed and your cheese is bubbling. Remove from pan and finish with a little drizzle of flavoured oil – I love chilli oil.
