I love In The Night Garden. Yes I admit it freely. It’s part of Izzy’s nighttime routine and its a very calming time for all of us when she really starts to wind down and is transfixed by the characters – her favourite being Upsy Daisy. When I found out you could go and see the show as part of a live theatre experience I just knew that we would have to go and yay for us we are! The lovely people from In The Night Garden have invited us to see the show and have also given me a fabulous discount code for all of my readers. How amazing is that?

Easter Egg Nests

Firstly apologies for the lack of blog posts of late.. I’ve had a rather stressful and tiring few weeks but I’m trying to get back on track. I was actually convinced I’d posted this recipe as I uploaded pics to Instagram a few days ago and then promptly forgot. Pah.

Anyway this is an ideal, very simple recipe to make with our children this Easter. I used to make these using Shredded Wheat but it was very expensive in my local supermarket last week so I went with own brand cornflakes instead and they tasted just as good.

It was Izzys first attempt at cooking/baking and we had a lot of fun. I think she was a bit amazed at all the chocolate and stickiness ( we don’t let her eat much chocolate) and would sneakily lick the spoon at every opportunity.

Easter Egg Nests

You will need:

225g milk chocolate ( Cadburys dairy milk is best )
80g cornflakes
50g butter
2.5 tbsp golden syrup
24 mini eggs

Put 12 paper cases in a bun tray or like me use silicon cases instead.
Melt the chocolate, golden syrup & butter in a bowl set over a pan of simmering water ( careful not to overheat your mix or it will be grainy) Stir until smooth.
Remove the bowl from your pan and stir in the cornflakes until it is all coated in the chocolate.
Divide the mixture between the cases and press a few chocolate eggs into the centre of each nest. Chill in the fridge until completely set.

Totally delicious and a little addictive. Izzy only had around half of one so I’m unsure as to why the other 11 disappeared so quickly….Hmmmm,.

Lucy’s lamb burgers – guest post!

One of the things I really love about Twitter is getting ideas from fellow tweeters on recipes to try and seeing pics of everybody’s supper. I always look out for tweets from certain people as I know they are foodies at heart too. One of those is the very lovely Lucy ( @lucy_sg ) who always manages to get my mouth watering. I’ve finally managed to twist her arm and she has agreed to share a recipe with us so without further ado and so she doesn’t get time to change her mind here it is:

MY FIRST FOOD BLOG (or any blog for that matter)!

I love food. Food is awesome. I’ve had a tricky relationship with food in the past but we had a talk, made up and now we are proper mates, me and food. Someone wise once said to me, “sometimes your body needs broccoli but occasionally your soul needs cake”. True dat innit. I tweet about food quite a lot on that there Twitter. Most days I’ll post a #tweetwhatyoueat around teatime.
Some people have said that my food sounds fancypants but I don’t see it that way at all. I have a husband, two kids and a mortgage to pay. I buy the best quality ingredients I can afford (a monthly visit to the butcher and a weekly online shop) but it has to be hearty, non-faff food on a budget.
I cook for my family and for my own enjoyment but recently a few Twitter peeps have asked for some of my recipes. Easier said than done because my cooking style is quite instinctive. I rarely weigh or measure and chuck things in depending on my mood or what I have in stock, so producing a written recipe is hard! Later they came back and said they’d tried it and found it easy and tasty! This made me beam with pride! Bit weird. I’d only ever cooked for me. It’s my little slice of time in my own kitchen-shaped bubble. I didn’t expect to feel so excited about other people taking an interest in MY food!
Then @writingforfun asked me to write a piece for her blog. A BLOG?! Eek! I’ve never ventured into the blogging world before. Bit scary. Very scary. Terrifying. I cook for my husband and kids every day, for my parents occasionally but I don’t do dinner parties. It’s very rare that my food is unleashed on the wider world. What if everyone else thinks it’s cack?!
Anyway, here it is. A very simple recipe for lamb burgers. A big favourite in our house. Quicker, cheaper and healthier than takeaway or ready-made burgers. Be gentle with me!

Homemade lamb burgers (serves 4)

Ingredients:
– 1lb (or a normal sized supermarket pack) of lean minced lamb
– 1 egg
– 1tbs jarred caramelised onions or sweet onion chutney
– 1tbs balsamic vinegar (not too much or the mixture will be too wet)
– 1tsp (or 1 clove) minced garlic
– Mint (I use a dollop of jarred stuff but use freshly chopped if you have it)
– Pepper (I don’t add salt because I’m cooking for children but add some if you think it needs it)
– A little oil for cooking (I use mild olive oil but this is entirely personal preference)
To serve:
– 4 wholemeal rolls
– 4 gherkins, sliced lengthways
– Ketchup

Method:

– I do this in a food processor with the mixing attachment (rather than the chopping blade) but you can do it in a bowl with your hands just as easily. Chuck all the ingredients into the bowl or mixer and work it until well mixed. Don’t overdo it if you’re using the mixer or it’ll be a smooth meaty puree – not a great texture!

– Divide into four and shape with your hands into patties. If I have time, I leave them to rest in the fridge for 20 minutes but this isn’t strictly necessary. If you work during the day, you can make them in the morning and leave them in the fridge so they’re ready to cook as soon as you get home.

– To cook, I use a griddle pan but you could grill them or use a normal frying pan. Rub the burgers with a little oil and wait until the pan is really hot before putting them in. They need about five or six minutes each side. Turn them once halfway through. DO NOT keep turning, fiddling or poking them or they’ll fall apart!

– I serve them in wholemeal rolls with sliced gherkins and ketchup. Corn on the cob and a side salad go really well. Some stilton crumbled on top would be tasty but it’s up to you. Coleslaw, oven chips or homemade potato wedges – serve them however you like!

– In the summer (if it ever arrives) you can use this same recipe to make little kofte kebabs on skewers for the barbecue. Use it exactly as it is or add some spices (maybe chilli, cumin or whatever you fancy).

Toddler Treats

Sometimes I find it hard looking for healthy but tasty snacks for Izzy. Sure she loves cheese puffs and give her a biscuit and she will love you forever but we all know that’s not ideal. Yoghurts, cheese, carrot and pepper sticks all go down well here but I think it’s good to be creative and make it a bit fun for your toddler.. I mean food before 1 is just for fun but does that mean food after 1 can’t be fun? Surely not.

So over the next few months I’m running this feature ..aptly named Toddler Treats.

The first snack idea I stole from Brittany at A Healthy Slice of Life I LOVE this blog. Sometimes I wish I lived in America so I could eat and shop in the amazing places that she does. Jealous much? Anyway she has fab ideas for food for children and adults which has even earned her a little tv spot in America. Anyway it’s a cute blog so go follow it and if you live in the UK you will find a nice little email notification on many an early morning with a post to read while your still tucked up in bed.

Brittany mentioned Banana Sushi and it looked so simple I had to give it a whirl especially as Izzy loves peanut butter and bananas. I can’t really write a recipe out for this as its too simple but what I did ( slightly adapted ) was use a whole grain tortilla wrap and spread it with smooth peanut butter and then place a banana on one end and roll up tightly to form a sausage shape. Then slice into rounds to look like sushi. Tada. Brittany suggested a small pot of honey to dip but as Izzy loves yoghurt sooo much I used a fromage frais instead… It went down so well! She loved the whole dipping aspect and was very excited when she discovered the slices of banana.

Definitely one to recommend.

Next post will be an easy peasy hummus/houmous recipe -delicious for you as well as your toddler.

Silver Linings

Sometimes you have a really rubbish day.. sometimes it’s a week and if you are really unlucky it can drag on even longer. Mostly you are aware that there are (many) other people having a worse time than you are but even so it’s hard not to wallow. Really hard.

For me when I’ve had an especially crappy day the silver lining is that I remember more than at any other time how lucky I am to have someone amazing to lean upon. There is nobody else I’d rather share my bad times with.. If that makes any sense at all. Thank you. I must learn to appreciate you more.

The 50 breads challenge #6 – proper garlic bread

I’m starting to think I may have bitten off more than I can chew with this challenge. It’s March and I’m only on challenge number 6… Aaarghh why does life always get in the way of baking? I’m determined to not give up so there may be at least one week where I make a LOT of bread ( who is coming to stay? )

This week I made Paul Hollywoods garlic bread – this isn’t our typical dripping with butter Garlic bread but a proper bread with the incredible addition of roasted garlic cloves kneaded in before the final prove. It’s fairly simple to make and the taste is pretty awesome.

What do you love?

It’s a simple question.. What do you love? I don’t mean the obvious family, friends etc. I mean your interests, hobbies or maybe just cake.

For me I love cooking .. and books. I love other things too such as festivals, blogging, music, travelling, films and much more but really if I had to narrow it down to just two it would be cooking and books.

The love of books for me started extremely early. I was nicknamed bookworm ( how cool ) by my family and I was caught reading my ( 10yrs older ) sisters copy of A Colour Purple at the tender age of 8. Oops – I may have got into trouble for that one. I literally would read anything I could get my hands on. These days I’m slightly picker about what I read but my taste is pretty varied and I’ll give most genres a whirl ( aside from extreme horror ) but you know what I read most these days… Cookery books! I don’t just read them for recipes, I read them as I would a normal book and ah I do love finding an old classic in my local charity shop.

I *may* also have a few on my Kindle. I want more. It’s an addiction but its not a bad one really. Don’t ask me to choose a favourite as I just couldn’t.

As much as I love the amazing recipe websites that have popped up recently and also I mostly like to make up my own recipes these days I couldn’t give these books away .. Something very special about thinking of the many times a book could have been used to help create that special meal. I heart my books.

Spending Women’s day with Women #blogsummit

I spent today – International Women’s Day with some pretty fabulous bloggers – mainly women with the exception of Tom Arber ( photographer and guest speaker).

Having never attended a blog summit/blog camp/bloggers conference I didn’t know what to expect and I imagine I was not alone in being slightly apprehensive..possibly even a little scared ( yes I am a wimp). Thankfully it was a really lovely day learning lots of new ( very useful) blogging tips. I know what SEO means now: search engine optimisation don’t ya know. I know that Google can be pretty evil and will sometimes inspect my blog with a fine toothcomb. I know how to avoid incurring Googles wrath (Thanks to Tom at Fresh Egg) I know to how to take better photos thanks to the very lovely Becky & Tom of the amazing Ar Blog.

I learnt about how to work with charities and the good my blog could possibly do thanks to Annie ( Mammasaurus) – possibly the only blogger we all instantly recognised.. She’s friends with Davina and Jonathan Ross and part of the famous #teamhonk and I learnt a million useful tips from Cathy of Nurturestore – my Pinterest is getting an overhaul and Facebook well I may just venture back into your murky waters. I also met founder of Tots100 Sally Whittle and lots of lovely twitter friends. In fact it was kind of like a game of guess who trying to match the twitter name to the person.

I will be signing up with Blinx and Tots100 ads shortly to help them raise money for charity via advertising as a result of some inspiring chatter today – interesting times for us parent bloggers

Sometimes a group of women can be intimidating but for once I can honestly say I didn’t really worry about how I looked or if my blog stats were higher than whoever I chatted to or how many slots above me they were in the Tots100 chart. I just enjoyed the characters I met and being part of such a supportive community. We have been reminded lately of just how amazing the blogger network can be and today was yet another example of that. Thanks to all at Tots100 who made it such an interesting day, to Fresh Egg, Blinx and the guest speakers.

Ooh I almost forgot there was free Actimel! Lots of it. The coconut flavour is divine and I’m not being paid to tell you that 😉
