Stuffed Nutella Cookies – A Tribute To Coriander Queen

A lot of the time words flow freely for me.. in fact in some posts I have to do serious editing to make it a readable length. This post however is harder to write.

I am part of a really close knit food blogging community and in March, sadly we lost one of our gang. Isabella King who wrote the blog Coriander Queen passed away at the age of just 29 and it hit our group hard. We were at a bit of a loss to find a way to both honour her and celebrate some of her gorgeous recipes.  We ended up deciding that we would all make, then share one of her recipes on our blogs on the same day at the same time. I like to think she would have liked this way of showing her the respect she had from her fellow food bloggers and I hope for her family and friends it brings a little light into a dark time.

When chatting in our group about Izzie, I was struck by how similar our thoughts on her were. A lot of us in the group have never met, yet we are incredibly close and support each other through a lot. I never met Izzie in person but every single contact, message, blog comment and discussion I had with her was positive and cheery and she was always so incredibly kind and thoughtful. Some people have personalities which just shine and I think she was one of those people. Like most of us in the group her blog was very important to her and she was good at it.

I have spent a good while browsing her blog this past month, she created some amazing recipes and I finally chose the Stuffed Nutella Cookies as the recipe I would recreate. I remember her first sharing the recipe last Autumn, I drooled a little at the time and I am also a bit of a Nutella addict. I admit that following her recipe and baking her cookies was emotional but it was a nice way to remember her.

Stuffed Nutella Cookies

You will need:

150g Self Raising Flour
115g Butter
115g Light Soft Brown Sugar
15ml Golden Syrup
12 teaspoons of Nutella

Firstly place your spoonfuls of Nutella on baking paper on a flat baking tray and pop in the freezer for 30 minutes. Now preheat your oven to 180c. Cream you butter and sugar together until smooth, now add half your flour and syrup and mix until well combined. Now add remaining flour. Remove Nutella blobs from freezer and use your dough to form balls around the Nutella. Place back on the baking paper ( its is fine to use the same piece again ), leaving space to spread  and bake for 14-16 minutes until golden. Remove from oven and leave to cool slightly.

These cookies are so easy to make and everyone that has tried them has loved them, I can see me making these regularly now and it feels like a really nice way to remember Izzie ( aka Coriander Queen ).

Nutella French Toast Roll Ups

Sometime last year I saw a video online of somebody making french toast roll ups.. filled with Nutella! Oh it looked incredible and I decided I would make them, mentally added it to the list of 1000 plus dishes I already had stored on my to make list and forgot all about it.

Then a few days ago I was feeling like I needed a decent brunch, we all know brunch is better than breakfast. I spotted a jar of Nutella just calling my name and I had some white bread that needed to be used up, the video I watched didn’t give quantities or exact instructions but it seemed simple enough.

Wow. Wow is all I can say, such a simple idea but oh it is ridiculously tasty. My friend Ceri managed to turn up for a coffee just as I was finished making the first batch so I even had an official tester and it would be fair to say he approved.

Nutella French Toast Roll Ups

2 slices of bread, crusts removed ( I find slightly stale white bread works best for French Toast but use whatever bread you prefer )

2 tbsp Nutella

1 free range egg

40ml full fat milk

3 tbsp caster sugar

1/2 tsp ground cinnamon

1 tbsp butter

Beat your egg and milk together in a shallow bowl. Mix your sugar and cinnamon together and dust across a plate. Use a rolling pin to flatten your bread slightly and spread Nutella on one side of your bread, roll up tightly like a swiss roll. Melt your butter in a large frying pan over a medium – high heat.  Dunk your roll ups in the egg/milk mixture and pop straight into the pan ( watch your fingers ). Cook on all sides until golden brown then remove from pan and roll in the cinnamon sugar. Serve whilst hot, perhaps with a side of crispy bacon!

10 Nutella Recipes Guaranteed To Make You Drool

You know I’m good to you right? I have only gone and found the best Nutella recipes just for you. Yes, there are ways to eat Nutella which don’t involve just grabbing a spoon – although that is indeed a great way to serve it.

Here are a collection of recipes from myself and my fellow bloggers:

The first three recipes are from Kerry Cooks, a friend and fellow food blogger who I think is possibly as addicted to Nutella as I am. Her blog is packed full of recipes you will want to try so go check it out.

First up a Strawberry Nutella Pizza… I have tried Nutella on Pizza before so I can recommend it for sure.

Next up is her Nutella Millionaire Shortbread which oh my… made me drool the first time I saw it ..and the second and the third. It just looks so fudgy and delicious. I am going to try it out..for research purposes of course.

And finally from Kerry is this No Bake Nutella Chocolate Bark, if the no bake didn’t draw you in then its worth noting this bark is topped with Ferrero Rocher..which is probably one of the nicest chocolates in the world.

This next recipe is more of a how to from me than an actual recipe. It makes the most incredible hot chocolate and more importantly it uses up every scrap of the pesky Nutella which sticks to the sides of the jar.

Another recipe from me next, these muffins are the perfect combination of Bananas and Nutella. They are so moist from the bananas and well just so Nutella..y.

So we have already established that Nutella is a perfectly acceptable breakfast and this Nutella French Toast from Tin & Thyme sounds like such a great Sunday morning breakfast. Or any other day really.

3 Ingredient Nutella Cake & 4 Ingredient Nutella Brownies

I’m sure you have all seen the photos floating around of the 3 ingredient Nutella brownies. They are everywhere right now. Buzzfeed, Facebook, Twitter..Instagram.

I of course took it upon myself to try them out and let you know how it went. The recipe I originally followed was from Instructables. It called for 280g Nutella with 62g of plain flour and 2 eggs. Simple. The method is easy too, mix it all together and bake for about 30 minutes. The mixture looked pretty good:

I baked it for just 20 minutes as I could tell it was done. When I cut into it I discovered it was more of a cake than a brownie, a delicious cake but a cake none the less. It would be lovely served with custard or ice cream while warm or left to cool and topped with icing or chocolate. They would be great for children at picnics as they are less squidgy and messy than normal brownies.

3 ingredient Nutella brownies

I was a bit annoyed though that they weren’t brownies so after a bit of experimenting and a bit of Instagram help – thanks Not Another Mummy Blog I made these 4 ingredient Nutella brownies:

You will need:

400g of Nutella ( or supermarket own brand Choc Hazelnut spread )
2 eggs
65g plain flour
50g dark chocolate chips

Preheat oven to 180/gas mark 4.
Mix all ingredients together, pour into a greased and lined square baking tray (approximately 9 x 9inches)

and bake for about 25 minutes until the top is set but it’s still a bit jiggly and squidgy inside.

Now these were brownies, fudgy and super chocolatey.

If you eat these while warm you will occasionally get a bite of melted, gooey chocolate which just takes it up a notch. Add some salted caramel sauce and perfecto.

Got Milk?

I don’t drink enough milk. In fact I rarely drink any. I never have time to have cereal in the mornings and I realised the other day that other than drop in my tea I hadn’t had any all week. Not having enough calcium in your diet is not good,especially when you spent 5 years of your adulthood on the contraceptive injection which can cause osteoporosis. Anyway I’m rambling. When I was pregnant I made sure I drank milk,in fact I drank a ton of it due to horrendous heartburn but since I stopped breastfeeding last year I have stopped taking care of my body as much which is sad.

I have decided to have a milky drink/ milk based smoothie etc every day to get some extra calcium in and enjoy it too.

This started this week and so far I’ve enjoyed Nutella hot chocolate and Banana&Vanilla smoothie. Yum. What a good excuse to drink delicious things. I take my hot choc in an insulated cup on my journey to work. It smells so good I’ve had envious looks all week. Smug smiles from me until I get to work and see I have chocolate milk over my nose 😮

You don’t really need recipes for these drinks as they are self explanatory but here you go:

Nutella Hot Choc

1/2 pint of semi skimmed milk ( you could use any type)
1 tbsp Nutella
Approx 1 inch of boiling water

Heat your milk. I zap it in the microwave for 2 mins. Mix your Nutella with your boiling water and then top up with the boiling milk and stir well. If you like a more cocoa..y type of drink add a spoonful of drinking chocolate powder ( such a cadburys or green and blacks) but its truly delicious just left alone. No sugar,no extra flavours just warm hazelnuty Chocolatey milk. Ahhh. Bliss.

My love affair with Nutella hot chocolate began last June in France. Hot chocolate tastes even better on holiday.

Banana Vanilla Smoothie

1/2 pint of skimmed milk
1 ripe banana
1 tsp of vanilla essence ( I use NielsenMasseys)
4/5 ice cubes

Blend all of above in smoothie maker or blender. Serve. You could also add strawberries. If you want to be super healthy add a handful of baby leaf spinach. You won’t really taste it but its so good for you.

So there you go,simple delicious ways of getting your calcium requirements. Or you could just eat cheese…hmm but that’s another blog post.
