I love cocktails and if I have to pick a favourite it would be a Mojito. Something about the combo of rum, mint and lime combines to make THE best cocktail. This Mango and Lime Rum Punch may not be a Mojito but its still pretty awesome!

Mango & Lime Rum Punch
You will need:
150ml chilled mango pulp/puree
Juice of 1 lime
25ml sugar syrup
75ml dark rum
100ml chilled still lemonade
granulated sugar to rim your glasses/a little sugar syrup to decorate your glasses
Chill your pulp and lemonade first. Blend all of your ingredients together, I just stirred them well but you could blitz in a blender if you wish. Brush the rim of the glasses with a little sugar syrup and press into some sugar to make it look a little prettier – serve with a wedge of lime on the edge of the glass.
Best served on a sunny evening al fresco!
