Lemon And Lime Drizzle Cake

Today I have a really quick and easy recipe for you, a zesty and moist traybake. I love any cake which involves mixing all of the ingredients together in one go, they always appeal to my lazy side. This should take no more than 5-10 minutes of prep and then you can put your feet up with a cup of tea whilst you wait for your cake to bake.

Two weeks ago I decided to bake a lemon drizzle cake, a recipe I have made and changed numerous times over the years. On this occasion I decided to make a lemon and lime version, the reason for that being simply that I only had one lemon but a number of limes. That same night when my cake was cooling on the cake rack, I watched The Great British Bake Off and they were making drizzle cakes as the first challenge.. even stranger one of the contestants made a lemon and lime drizzle cake. Spooky hey?

Lemon & Lime Drizzle Cake

You will need:

Base:

200g softened butter
200g golden caster sugar
250g self raising flour
1.5tsp baking powder
4 eggs
60ml semi skimmed milk
zest of 1 lemon and 1 lime

Topping:

200g granulates sugar
juice of 1 lemon and 1 lime

Preheat oven to gas mark 180c. Line/grease a tray bake tray. Blend all of your base ingredients together until smooth, it is easiest to use a blender but I will often beat with a wooden spoon as I find it therapeutic. Pour into your tray and bake for 30-35 minutes until cooked through and the sponge bounces back slightly. Leave to cool slightly but not completely – it needs to be warm to absorb the drizzle.

For the drizzle topping mix your lemon juice and sugar together and pour over your warm cake. Leave to cool until the cake has a crunchy topping. Cut into squares and serve.

  • These foil trays that you can pick up really cheaply in the supermarkets are great for traybake, the perfect size and also great if you want to transport them to an event or into work for your colleagues.
