3 Ingredient Nutella Cake & 4 Ingredient Nutella Brownies

June 30, 2015 · by munchiesandmunchkins · 5 Comments

I’m sure you have all seen the photos floating around of the 3 ingredient Nutella brownies. They are everywhere right now. Buzzfeed, Facebook, Twitter..Instagram.

I of course took it upon myself to try them out and let you know how it went. The recipe I originally followed was from Instructables. It called for 280g Nutella with 62g of plain flour and 2 eggs. Simple. The method is easy too, mix it all together and bake for about 30 minutes. The mixture looked pretty good:

I baked it for just 20 minutes as I could tell it was done. When I cut into it I discovered it was more of a cake than a brownie, a delicious cake but a cake none the less. It would be lovely served with custard or ice cream while warm or left to cool and topped with icing or chocolate. They would be great for children at picnics as they are less squidgy and messy than normal brownies.

I was a bit annoyed though that they weren’t brownies so after a bit of experimenting and a bit of Instagram help – thanks Not Another Mummy Blog I made these 4 ingredient Nutella brownies:

You will need:

400g of Nutella ( or supermarket own brand Choc Hazelnut spread )
2 eggs
65g plain flour
50g dark chocolate chips

Preheat oven to 180/gas mark 4.
Mix all ingredients together, pour into a greased and lined square baking tray (approximately 9 x 9inches)

and bake for about 25 minutes until the top is set but it’s still a bit jiggly and squidgy inside.

Now these were brownies, fudgy and super chocolatey.

If you eat these while warm you will occasionally get a bite of melted, gooey chocolate which just takes it up a notch. Add some salted caramel sauce and perfecto.

Double Chocolate Fudgy Brownies

January 19, 2015 · by munchiesandmunchkins · 7 Comments

I think I’ve talked quite a few times about how I think baking is good for my soul. I haven’t spent much time in the kitchen over the past few months and I’ve missed it. I had a few hours to spare this morning which is a rarity these days and I spent it in my kitchen and I ended up with two loaves of bread, brownies, dairy free biscuits and more…

For a few hours I left my problems at the door and concentrated on the food and I think it has done me some good. Maybe I should open a bakery?

I didn’t use to like brownies, the ones I bought at markets and festivals were often dry or just not chocolatey enough but tried one a few years ago at The Big Feastival that changed my mind and I tried for a long time to recreate them. Now I think I prefer mine! There is something incredibly indulgent about a chocolate brownie. If you make it the right way they are fudgy and moist inside with a slight crunch outside. Having two different types of chocolate is my favourite way although I have also made them with three!

I must have made these twenty or thirty times and I always get a great result. They are my fail safe dessert recipe and I’ve also given them as gifts to friends who have had new babies – they are great for when you have the breastfeeding munchies or just when you have had (another) really long night.

Double Chocolate Brownies

You will need:

275g softened butter
350g caster sugar
4 large eggs
1 tsp vanilla paste/or extract
75g cocoa powder
100g self raising flour
50g white chocolate chips ( I used chocolate buttons broken up)
75g dark chocolate chips

Preheat oven to gas mark 4.

Cream your butter and sugar together then add all other ingredients apart from your chocolate and beat well – I tend to throw it in my stand mixer. When it’s all mixed add your chocolate and pour into a baking tray (approximately 12 x 6). Bake for 60 minutes or until there is no wobble left but it’s still a bit fudgy and gooey inside.

When they have cooled sieve a little icing sugar over the top to create a pretty effect or drizzle over some caramel sauce. YUM.

Great Bloggers Bake off – Brownies

September 22, 2013 · by munchiesandmunchkins · 4 Comments

I’ve been meaning to post this recipe for a while.. It really does make the very best gooey brownies every single time.

This is the second entry into the GBBO ..my first is HERE.

I am disappointed that for one reason or another I have missed out on several weeks but never mind. Once again I hope to be able to join in the remaining weeks.

My recipe is based on one that I fiddled with from Mary Berry – queen of cakes herself.

Beckys Brownies

You will need:

275g softened salted butter
375g golden vanilla caster sugar
4 large eggs
1 tsp Nielsen Massey vanilla paste/or extract
75g cocoa powder
100g self raising flour
35g white chocolate chunks/chips
35g dark chocolate chunks/chips
35g milk chocolate chips
50g icing sugar (for decoration)

Preheat your oven to gas mark 4 and grease/line a 12×9 traybake tin.

It’s the simplest method. Put all ingredients apart from your icing sugar in a large mixing bowl and mix either by hand or with an electric whisk/beater for a few minutes until combined.

Tip into your prepared tin and level out. Bake for approximately 40 mins until your top is set and it still has a slight wobble but is cooked. Remove from oven and leave to cool in tin for a few minutes before placing on a wire rack, when more or less lukewarm dredge with sieved icing sugar. Cut into squares and serve.

These are delicious served with vanilla ice cream when slightly warm.

They keep really well for days in a sealed container although good luck with trying not to eat them. They are seriously good -this is the 4th time I’ve made these in 6 weeks! Oops. I have shared though. Honestly.
