I’ve been making Rock Buns for a long time.. I can remember it being one of the first things I learnt to cook from my mums Bero book and now I more or less make them from memory with a few adaptations. It’s been a few years since I last did it but over the weekend my mum dropped some over that she had made and they were lovely and well I wanted more! It feels good to be baking again 🙂
As always it’s a fairly simple recipe but you can change it in lots of ways to make it your own.
The basic recipe can be found here and here is my version:
Zesty Dark Chocolate Rock Buns
225g Self Raising Flour
A pinch of salt
100g Butter ( I rarely use margarine when baking)
75g dark choc roughly chopped
Zest of 1 orange and 1 lemon
50g caster sugar
1 medium egg
1/2 tsp nutmeg
milk to mix (as needed)
Preheat oven and prepare two baking trays or be lazy like me and use 1 silicone cupcake tray and 1 baking tray 😉
Mix flour and salt and rub in your butter with fingertips.
Add your choc, zest, sugar and nutmeg and combine thoroughly. Add your beaten egg and as much milk as is needed to make a stiff dough. Place in heaps on baking tray or in cupcake cases/tray – depending on how you want them to look. Bake for approx 10-15 mins at gas mark 6. I made 12.
Eat warm sliced in half with butter or without or cold with a cuppa..or anytime really. They are divine.
