I used to be a bit of a Pimms addict. Not in an I’m an alcoholic sense but every time I went out for a drink or had drinks at home it was my beverage of choice. Light, summery, full of fruit – it’s practically heathy right?
Then I got pregnant and spent a lot of time trying to find a mocktail version which I did – yay and in stepped Schweppes summer punch. After my last pregnancy I went off it completely for about 6 months and it’s only recently that I have fancied it again but I’m bored of the same old Pimms so I replaced the strawberries with watermelon, the mint with basil and the plain old lemonade mixer with a gorgeous rose lemonade ( from Fentimans ) and it’s more than a little bit epic. I whizzed it up in the Vitamix but a normal blender which is able to crush ice will do.
Pimms With A Twist
You will need:
Pimms ( about 125ml or 1 cup)
1&1/2 Cups of watermelon just roughly chopped
1 small bunch of basil
1 tray of ice
2 bottles of Fentimans Rose Lemonade
Put your Pimms, watermelon, basil and ice into your Vitamix or blender and blend until smooth.
Pour into a glass and fill to halfway – it will look quite foamy. Top up with rose lemonade and garnish however you like – a basil leaf perhaps? Enjoy straight away or leave until the foamy drink settles into something so delicious…you won’t stop at one.
Please excuse the foamy look of the drink. I managed to delete the pic I took of it once it had settled.
This may replace my regular Pimms forever more. Enjoy.
