9 Perfectly Autumnal Recipes

I won’t go on again about my love of Autumn as I believe I have waffled on about that enough on here lately ( but I really do ). I will however tell you about my love of Autumn and Winter food. I am a big fan of a BBQ and a glass of Pimms in the Summer but when the nights get cooler and I make slow cooked meals or warming roast dinners – it’s my favourite time for food. I make stews and casseroles topped with dumplings, beef cobblers with cheese scones or just simple roast chicken dinners. It is also the time for rice puddings, sticky toffee puddings and indulgent hot chocolates. It is not really surprising that the New Year sees an influx of new gym memberships!

Now that I am happily ( as happy as a woman ever can be ) at my goal weight I will be trying to maintain some kind of balance even in the Winter months and there is no reason why a dish can’t be comforting and warming without a silly amount of calories. I am going for a 60/40 low fat to indulgent balance. Seems like a good ratio to me!

Coming up this Autumn are some easy slow cooker meals, more variations on my favourite soda bread and healthy veggie soups which can be prepared weeks in advance and frozen for those crazy busy days. Along with that I will be sharing two new cocktails, a new hot chocolate recipe and telling you how to make homemade Vanilla Extract.

Food Thoughts & Quotes – Virginia Woolf

Another week has passed, a week of cooking and eating and thinking. This weeks quote is from Virginia Woolf:

“One cannot think well, love well, sleep well, if one has not dined well” – Virginia Woolf

This quote is taken from an essay she wrote in 1929 and is related to the low standard of food served at women’s colleges at the time.

I agree with it fully.

How often have you found your work suffers or your emotions erratic, your mood irritable to say the least purely due to lack of food or ..the wrong food?

There is even a name for it now: Hangry. The anger caused by hunger. I know I have been hangry a few times.

We all know that if we eat well, we feel better. We eat poorly then our mind and body suffer the consequences. That is not to say I have a problem with ..shall we say junk food? You know what I mean.. fast food served out of a window, swapping a chocolate bar for a meal. I do it, the majority of us do. I normally however end up feeling fairly rubbish because of it.

I also have poor sleep if I don’t eat enough, sometimes I get so caught in work that I just forget to eat. This isn’t often but by the time I stop and think oh I skipped lunch or dinner I have normally gone past the hunger. So I go to bed but my body doesn’t know what to do because it hasn’t got the fuel it needs in it, so my night is unsettled and I wake like a grizzly bear on the hunt for honey. Typically this results in eating the entirely wrong thing for breakfast and the cycle can continue.

On the other hand if I eat a good, filling and balanced meal, I feel energised and happy. I made such a good roast chicken dinner today, it is my daughters favourite meal by far and it always leaves that warm, comforted feeling that I had myself as a child when my mum made it for me.

I went on to work hard and have a happy, motivated but relaxed evening. Now that is not purely because of the food. But I am sure it helped.

Food, Films & Fun At East Gate Llanelli

Last month I spent a lovely day with the girls and my mother at East Gate Llanelli. We spend a lot of time at the East Gate development especially at the cinema, I take the girls there at least once a month. The development also houses Nandos, Hungry Horse, Red Hot American Diner, a gym as well as The Odeon, Costa Coffee and now Joe’s Ice Cream parlour too.

We were invited to have a bit of a food filled day. We began with a meal at Red Hot Diner, this is an American themed restaurant which serves lots of typical diner food and also has a pancake house! The girls enjoyed The Statue Of Liberty.. or as Chloe calls her the lady with a lollipop.

Inside the diner is a play area for little ones, ah this does make meal times or at least the wait for the food to arrive so much easier.

I chose a Mojito mocktail which was delicious and the girls had blackcurrant squash served in cute milk bottles which they adored.

I chose a Southern fried chicken wrap whilst my mum opted for the salad and Izzy had macaroni cheese. Word of warning.. the portions are enormous!!! We really struggled to finish and had to say a sorrowful no to the offer of pancakes for dessert. The food was freshly prepared and really tasty. Service was friendly and there is a relaxed, fun atmosphere in the restaurant.

Next up we strolled over to The Odeon to collect our cinema tickets and our indulgent coffees from Costa Coffee. At Costa we were treated to hot drinks and cakes before moving on to collect our family meal deal at Odeon which included popcorn, drinks and sweets for the girls. We saw Pete’s Dragon and ah it is such a fabulous film, perfect for all generations.

We finished up at Joe’s Ice Cream parlour with a Scarlets Sundae..it sent me into a bit of a food coma but it was delicious.

Overloaded Garlic Bread

You know when you have those days when you just crave indulgent junk food. I normally find it happens when I am tired.. or possibly hungover. Those days are surely the days when you should really be pumping your body with fresh water and fruit or veg but that’s not what your heart wants is it?

I am definitely a believer in following your heart and my heart led me to make this overloaded garlic bread, stuffed and topped with some of my favourite things. Cheese, Bacon and Red Onions. YUM.

This is simple to make as are most of my recipes and will satisfy all of your junk food cravings.. I promise.

Overloaded Garlic Bread

You will need:

1 part baked baguette
25g cheddar cheese grated
2 rashers of bacon, cooked until crispy and diced
2-3 sundried tomatoes, chopped
1/4 small red onion, finely chopped and cooked until dark and crispy
25g salted butter
1tsp garlic puree
pinch of chopped parsley

Preheat your oven to 200c.
Cut slices into your baguette, leaving 1/2 an inch or so at the bottom to hold it together. Melt your butter and mix in your garlic puree and parsley. Spoon some melted garlic butter into each space along with the sundried tomatoes and 1/2 of the onions and bacon. Now sprinkle your cheese, remaining bacon and onions over the top.

Create a foil parcel and cook for 8 minutes, now open up the foil and leave to cook for a further 4-5 minutes until golden brown.

Why All The Hype About Hygge?

Unless you are currently living under a stone or in a hobbit hole then you will have seen the word Hygge floating about. Whether it’s on your Instagram feed accompanying photos of fleecy throws or candles or on the covers of books on the shelves of WHSmith..telling you how to get more Hygge into your life. It is pretty much everywhere right now. In fact it has been called THE trend of Autumn 2016. I read an article which referred to it as us Brits trying to jump on the “Scand-Wagon”.

So what is Hygge??

Well for one small word it can mean lots of things. Having a cosy night in with your family? That is Hygge. Having a night out with friends – also Hygge. Lighting a candle and relaxing in the warmth of your home – you guessed it, Hygge again. According to Visit Denmark it roughly translates to coziness and it does remind me of the Welsh word cwtch in some ways.  Cwtch also has no literal translation but refers to a cuddle with a loved one or a small, cosy place, we also would use it to say cwtched up, for example under a blanket.

Danes who were asked in the street to describe it said the following:

“It’s a comfortable feeling”

“For me it’s cakes..especially when it gets darker” – I do like this one.

“Watching TV shows in bed under a blanket”

Although a lot also say it is very hard to explain in its entirety.

Have a quick search for #hygge on Instagram, with over 1.3million posts, you should get a feel for it.

Hygge didn’t originate in the Danish language but in Norwegian, where it meant something like “well-being.”

Now don’t get me started on the pronunciation, there are many ( and I mean many ) variations if you do a quick google search. From what I have found..with a lot of research which I totally enjoyed whilst drinking hot chocolate with a candle lit and a blanket thrown over me ( of course ) is that it should sound a bit like this:

To me ..if I was typing it and describing it to someone I would type it as Hueguh ( hue as in colour ) with an emphasis on the first H.  But I could be wrong.

There is a lot to love about Hygge.

Candlelight. Cuddles with the ones you love. Time with family and friends. Fleecy blankets. Meals enjoyed with others.

In summary, it sounds a bit awesome. But don’t most of us already enjoy most of those things? We just don’t typically label them. Why now? Why do we all suddenly want to be a bit more Hygge?

My guess is this, we live such busy and often independent lives now. Naturally as humans we crave the comfort and pleasure of the company of others, which in essence is what Hygge seems to be about. For those of you living in the UK you will be aware of how often we can be seen as grumpy, ignorant at times and depression rates are continuing to rise. We are also definitely spending less time with others, at least in the physical sense. Great chunks of our lives are now spent at home alone and online ( says the blogger).  Of course we now want to mimic what is considered the happiest country on earth. I mean they even have a Happiness Research Institute.

Meik Wiking who along with being the chief executive of Copenhagen’s Happiness Research Institute also wrote The Little Book Of Hygge believes that Hygge could be the “missing ingredient” that leads to Denmark regularly topping world happiness rankings.

“We did studies on why Denmark does well, and talked about Danes’ social security, equality, wealth and tolerance,” he said. “But the trouble with that explanation is that it doesn’t set Denmark apart from the other Nordic countries. Maybe – maybe – hygge is part of that missing piece.” – quote taken from The Guardian.

But the grass is always greener right? Maybe they are happier, maybe they aren’t. Every English person isn’t grumpy, every Dane doesn’t have a permanent smile and believe me not all of the Welsh can sing.

It has taken me some time in my life to get to this way of thinking but these two quotes sum it up:

“Very little is needed to make a happy life; it is all within yourself, in your way of thinking.” – Marcus Aurelius Antoninus

“…in the end you are the only one who can make yourself happy. More important, …it is never too late to find out how to do it.” – Ruth Reichl

However.. if  like me you really love candles and if hot, indulgent drinks and good company make you happy then this trend can only be a good thing. Especially now the nights are drawing in and it is getting colder. I am using this as an excuse to head straight to my local homeware stores and buy all of the candles and blankets.

Maybe it’s the blankets and the feeling of warmth which emanates from a lot of the articles I read about Hygge that make me feel Autumn in the very best time for it. Autumn or Fall has always been my favourite season. The golden colours, the fact that you can bundle up in snug clothes without actually being freezing cold and  then there are the stews, hot desserts and thick, warm drinks.

10 Nutella Recipes Guaranteed To Make You Drool

You know I’m good to you right? I have only gone and found the best Nutella recipes just for you. Yes, there are ways to eat Nutella which don’t involve just grabbing a spoon – although that is indeed a great way to serve it.

Here are a collection of recipes from myself and my fellow bloggers:

The first three recipes are from Kerry Cooks, a friend and fellow food blogger who I think is possibly as addicted to Nutella as I am. Her blog is packed full of recipes you will want to try so go check it out.

First up a Strawberry Nutella Pizza… I have tried Nutella on Pizza before so I can recommend it for sure.

Next up is her Nutella Millionaire Shortbread which oh my… made me drool the first time I saw it ..and the second and the third. It just looks so fudgy and delicious. I am going to try it out..for research purposes of course.

Herby Gnocchi With Tomato, Bacon & Leeks

I love Gnocchi, I cook it at least once a month. It is such a simple ingredient, fairly cheap and super quick to cook. I do occasionally make it from scratch, I really love to use a combination of sweet potatoes and regular potatoes for extra flavour but more often than not use store bought, normally the fresh version which literally takes about 2 minutes to cook. I like to boil, drain and use it to make a Gnocchi bake but I also like to make some really simple stovetop dishes using just chopped tomatoes, herbs and whatever I need to use up in my fridge or veg basket!

This dish is so simple and requires little attention.

Herby Gnocchi With Tomato, Bacon & Leeks

1 pack or 500g of gnocchi
200g diced smoky bacon
1/2 red onion diced
1/2 leek diced
2 garlic cloves diced
1 tbsp of dried herbs, I used oregano
400g chopped tomatoes
150g Parmesan
2 tbsp of olive oil
pinch of black pepper sea salt

Heat a large pan and add your olive oil followed by your leeks, garlic and onion and leave to sauté and soften, stirring occasionally. Add your bacon and leave to brown. Boil enough water ready to cook your gnocchi. Add your tomatoes, herbs and a generous sprinkle of sea salt and black pepper to your pan and stir well. Leave to simmer for at least 5 minutes.

Place your gnocchi in a large saucepan and pour over boiling water, add salt and cook over a medium to high heat for 3-4 minutes. You will know when your gnocchi is ready as it will rise to the surface of the water. Drain and add to your sauce, mixing in well. Serve immediately with a sprinkle of parmesan.

Papa John’s Arabian Pulled Lamb Pizza Review

I very rarely order food in. Maybe once every few months and it’s not often that its pizza. Don’t get me wrong, I love pizza but I often find it a bit of a let down. The toppings aren’t generous enough or exciting enough for me and ahh don’t get me started on an overly doughy base.

When Papa John’s got in touch and asked me to try out their new Arabian Pulled Lamb pizza I thought ..why not? I love lamb although I have never considered having it on a pizza before. Living in Wales the lamb I normally eat is roasted and served with mint sauce but I am always excited to try new flavours. The Arabian lamb certainly did not disappoint, in fact it’s full of delicious spice combinations and more than a little fiery which luckily I really enjoy.

I have never actually had a pizza from Papa John’s before although I had heard a lot of good things about them. Here is a little bit of background to the brand:

“Bake a better pizza and the world will beat a path to your door.” That maxim has been at the heart of our thinking at Papa John’s since our founder, John Schnatter, baked his first pizzas back in 1972 for the customers in his father’s tavern in Indiana.
What’s the secret of Papa John’s success? Is it preparing a better dough? Using better ingredients? Employing better people? Being committed to delivering ‘a better pizza experience’? Truth is, it’s all of those elements. And together, they help us continue to make Papa John’s a consistently and reliably ‘Better Pizza’.

So what’s on it?

Lets start with the succulent pulled lamb shoulder, slow-cooked for eight hours and marinated in a blend of Middle Eastern spices, add to that sliced pepperoncini, red onions and a layer of pepper confit finished off with fresh tangy tomatoes – and it works. It really works.

It arrived with a tub of their garlic sauce which is pretty potent and so good, I also served it with an additional homemade sriracho mayo ( I do love a good dip ) and a green salad. Perfect Friday night food. Maybe I added a rum and coke too..maybe.

There is a very good chance I will be ordering in pizza more often now that I know how good it can be and I have just discovered that there is a Papa John’s around the corner from my office…which could be dangerous!

Food Thoughts & Quotes – James Beard

Today I am sharing a few quotes from James Beard who was an American cookbook author, teacher, syndicated columnist and television personality. A champion of American cuisine he taught and mentored generations of professional chefs and food enthusiasts before he died in 1985.

Starting with:

“Food is our common ground, a universal experience” 

You only have to look at Instagram to see how food bonds us with others. Food photos are the most popular Instagram posts by far. We drool over each others dinners and share photos of our over indulgent desserts and snacks. It is so true that food is our common ground. We plan what we will eat each day, whether that be choosing which restaurant we will visit, how much we will spend on our food shop, perhaps you have no money for food and are one of the growing number of people dependent on food banks in the UK. Even worse perhaps you live somewhere where there is simply not enough food to go around. Whoever you are, wherever you are..you need food.

 
“Good bread is the most fundamentally satisfying of all foods; good bread with fresh butter, the greatest of feasts!”

Bread with butter, fresh bread with freshly churned butter..ahh I could happily swap a meal for this. In fact sometimes the bread basket at a restaurant before a meal just about spoils me for the meal itself.

Whilst we are on the subject of bread.. I definitely understand a really good sandwich. Do you? Maybe its a fried peanut butter and banana combo ( Elvis inspired of course ) or a really good BLT. Sometimes just chicken with a nice crisp salad and a little chilli sauce is enough to satisfy all of my food urges.

We could even take it a step further with my slightly overloaded garlic baguette?

Indulgent Stovetop Cinnamon Rice Pudding

I love Autumn and the fact that I can feel totally okay with making indulgent, comforting food. Rice pudding is one of those dishes that I remember from my childhood, my mum would make it regularly to serve after our Sunday lunch. We always ate it with a dollop of jam on top and I remember loving to swirl the jam in and make the pudding turn pink as I did. My mum would normally make it in the oven and it would form a thick skin on top which I wasn’t overly keen on at the time but now I quite like it.

This recipe is for a stovetop rice pudding, which means you can mix everything in one pan and you don’t even have to turn on your oven which is always a bonus. It does require some time standing over the stove as it needs you to observe it and stir quite often but I enjoy that, I find it therapeutic – maybe that is a little weird? I like to watch how it all starts to thicken and the rice puffs up and the only word which fully describes it, is that it becomes unctuous. Thick, gooey and so indulgent. You could of course reduce the calories and fat in this by swapping the cream for milk or using semi skimmed milk instead of whole but it is a treat and as long as you aren’t eating it every day then it’s just fine.

Indulgent Stovetop Cinnamon Rice Pudding

You will need:

100g pudding rice

50g golden caster sugar

200ml double cream

500ml whole milk

1tsp ground cinnamon

Mix all of your ingredients in a large saucepan ( go bigger than you think as the milk and cream really does start to bubble up ) and bring to the boil over a medium – high heat, reduce to a simmer, stirring regularly for approximately 20-25 minutes until it has thickened and the rice is soft and tender.

Serve with a sprinkle of cinnamon or maybe some chocolate chips or jam.. the topping possibilities are endless.
