I don’t know about you but I overdid it a little on the turkey, beef and ham over Christmas and I could do with a little break from meat. I’m not doing Veganuary or promising a veggie month but I am going to try and eat more vegetable based meals this year. Here is a round up of some veggie recipes from my favourite food bloggers. I’m aiming to try at least half of them this month, why don’t you give them a whirl too?
1. Cheesy Spinach, Mushroom & Potato Crust Pie
.Roasted Aubergine Cabbage Rolls
.Banitsa – Bulgarian Cheese Pie
.Kale & Roasted Winter Vegetable Salad
.Veggie Squash and Bean Burgers
.Peanut Buttery Butternut Squash Soup
.Cheesy Baked Plantains With Chilli
.Gemista – Greek Stuffed Tomatoes
.Thyme Polenta With Garlicky Wild Mushrooms
.Galayet Bandora
.Quinoa Bowl With Roasted Squash & Broccoli
.Wild Mushroom Baked Risotto
.Creamy Courgette Puff Pastry Tart

What a great collection!! I’m particularly intrigued by the courgette tart, for some reason I do not use them often enough in my recipes.
