Overloaded Garlic Bread

You know when you have those days when you just crave indulgent junk food. I normally find it happens when I am tired.. or possibly hungover. Those days are surely the days when you should really be pumping your body with fresh water and fruit or veg but that’s not what your heart wants is it?

I am definitely a believer in following your heart and my heart led me to make this overloaded garlic bread, stuffed and topped with some of my favourite things. Cheese, Bacon and Red Onions. YUM.

This is simple to make as are most of my recipes and will satisfy all of your junk food cravings.. I promise.

Overloaded Garlic Bread

You will need:

1 part baked baguette
25g cheddar cheese grated
2 rashers of bacon, cooked until crispy and diced
2-3 sundried tomatoes, chopped
1/4 small red onion, finely chopped and cooked until dark and crispy
25g salted butter
1tsp garlic puree
pinch of chopped parsley

Preheat your oven to 200c.
Cut slices into your baguette, leaving 1/2 an inch or so at the bottom to hold it together. Melt your butter and mix in your garlic puree and parsley. Spoon some melted garlic butter into each space along with the sundried tomatoes and 1/2 of the onions and bacon. Now sprinkle your cheese, remaining bacon and onions over the top.

Create a foil parcel and cook for 8 minutes, now open up the foil and leave to cook for a further 4-5 minutes until golden brown.
