After winning my Vitamix machine at last years Britmums conference I had big ideas about what I was going to make in it but various things got in the way and I ended up using it mostly to make slush puppies to satisfy my ice cravings.
This years will be different. Last week I began experimenting with salted caramel sauce. I made it in the traditional way on the hob watching carefully to avoid burning and keeping my hands well clear to avoid scalds. It tasted fabulous but I thought to myself this would be so much easier in the Vitamix. I wasn’t sure if it would work and I had to fiddle with the recipe to get it just right but when I did.. Oh WOW.
You will need:
75grams of soft brown sugar
30grams of caster sugar
55grams of golden syrup
80grams of butter
130ml of double or whipping cream
1tsp of good quality sea salt
Add your butter, sugar and syrup to the Vitamix and switch gradually to variable 2 speed 10. Blend for 2-3 minutes before adding your cream and salt and blending for a further 3-4 minutes until you have a smooth hot caramel sauce.
Be careful when tasting as it will be hot. Serve immediately over desserts or cool and then refrigerate in a tub – it tastes even better a day later. I defy you to not want to sit down with a spoon and devour it all.
